I remember having the creamiest polenta in a gorgeous Italian restaurant in London many years ago and was always disappointed when I tried to cook it myself, until my sister-in-law told me the little secret of cooking it in milk and then baking it, well now it’s just so perfect every time! This version is topped with a rich pork sausage and cannellini bean sauce! It didn’t photograph very well but it tasted the bomb! Meat-free Monday doesn’t have to be boring- this red pepper sauce is so tasty, even the kids scraped their bowls tonight!
The Italian Pantry stock these silky soft Italian sundried tomatoes in olive oil by Ottima that add so much flavour to this simple Red Pepper Pasta dish-

2 large red peppers
8 sundried tomatoes in oil
1 cup fresh basil
1/4 freshly grated Parmesan
1 Clove garlic
1/2 tsp salt
Oil from sundried tomatoes
500g pasta to serve hungry 4

Preheat oven to 200deg
Cut the peppers into chunks and drizzle in 1tsp oil and a little salt and pepper, roast for 10-15min

While the peppers are roasting bring the pasta water to the boil
Peppers are ready once they start to look charred on the edges

Combine the basil, garlic, salt, Parmesan, 6 sundried tomatoes, 4 tablespoons of the sundried tomato oil and 2/3 of the roasted peppers in a food processor/ nutribullet

Finely chop 2 of the sundried tomatoes and toss with the cooked pasta, remaining peppers and the red pepper sauce and sprinkle with grated Parmesan

This delicate Calabrian walnut cake has just 3 ingredients, takes 10min to mix, is gluten and dairy free and tastes the bomb!

3 cups raw walnuts
4 eggs, separated
1 cup castor sugar
Zest of 1 lemon (optional)

Grind the walnuts in a food processor until they form the texture of coarse sand
Beat the egg whites on high speed to form stiff peaks and set aside
Beat the egg yolks and sugar until pale and creamy.
Add the walnuts and lemon rind and slowly fold in the stiff egg whites until just combined.
Pour into a lined cake pan and bake at 180deg for 40min until golden
Cool and serve with a light dusting of icing sugar
