6 Months ago I tried a new cheese recipe. Sage Derby Cheese with Jersey Cow’s Milk. A very creamy texture and delicious. My greatest worry was that contamination might occur due to using fresh sage, but a surprise to see all is good. I will have to try again and make some improvements, but all in all I’m happy.
