Balsamic Glazed Steak Tips & Roasted Veggies Sheet Pan Dinner

INGREDIENTS
For the Steak
500g goulash
ΒΌ cup balsamic vinegar
2 tablespoons low-sodium soy sauce
2 cloves garlic, minced
1 tablespoon honey
1 tablespoon Dijon mustard
Β½ teaspoon ground black pepper
For the Vegetables
500g baby potatoes, halved
1 bunch asparagus, trimmed
1 medium red pepper, cut into chunks
1 medium green pepper, cut into chunks
1 medium red onion, cut into wedges
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
INSTRUCTIONS
In a mixing bowl, whisk together balsamic vinegar, soy sauce, garlic, honey, Dijon mustard, and black pepper. Add steak tips and toss to coat. Cover and marinate in the refrigerator for 30 minutes to 4 hours.
Preheat oven to 220Β°C
In a large bowl, toss potatoes, asparagus, peppers, and red onion with olive oil, salt, and pepper.
Arrange marinated steak on one side of a large sheet pan. Spread vegetables on the other side in a single layer.
Roast for 10 minutes. Remove from oven, flip steak, and stir vegetables.
Return to oven and roast for 10β15 minutes more, until steak reaches desired doneness and vegetables are tender.
Let steak rest for 3β5 minutes, then serve hot with roasted vegetables.
