Spring is in full swing and with berries at their peak and summer holidays just around the corner, it’s time to soak up the sunshine with fresh bold flavours! 🌞

My Deconstructed Strawberry Salsa is a vibrant twist on a classic that is perfect for picnics, summer braai’s or festive feasts. Bursting with colour and zest this is your go-to for easy, crowd pleasing deliciousness.

* 500g Sliced strawberries 🍓
* Coriander 🌿
* Finely sliced red onion 🧅
* Sliced Jalapeño chillies (remove the seeds if you prefer less heat) 🌶️
* Fresh lime juice 🍋‍🟩
* A drizzle of olive oil 🫒
* Flaky sea salt to taste 🧂

All the ingredients can also be gently mixed together, let it sit for 10 min for the flavours to pop. Serve with tortilla chips, over grilled fish or as a fancy toast topper.

Mediterranean Feta and Olive Dip

Ingredients:

* 1 Cup feta cheese, crumbled
* 1/2 cup pitted green onions
* 2 tbsp Willow Creek Medoro 100% Mediterranean Extra Virgin Olive Oil
* 1 tbsp freshly squeezed lemon juice
* 1 garlic clove finely minced
* 2 tbsp of fresh flat leaf parsley, finely chopped
* 1/4 tsp of freshly ground black pepper
* Optional: 1-2 tbsp plain Greek yoghurt for a smoother texture and extra creaminess

Instructions:

* Add the crumbled feta, pitted green olives, Willow Creek Mediterranean EVOO, lemon juice, minced garlic, fresh parsley and black pepper to a food processor.
* Blend until everything is combined, but still has a slightly chunky texture.
* If you want a creamier dip, add the plain Greek yoghurt and blend more.
* Spoon the dip into your serving bowl.
* Scatter a few green and black olives on top, fresh parsley and drizzle with Willow Creek Medoro 100% Mediterranean EVOO.
* I chose to pair my dip with fresh, brightly coloured crudités but you can also use crackers, pita bread or tortilla chips.

Medoro is sourced from the sun kissed groves of the Mediterranean, delivering a soft, fruit forward profile of delicate almond, apple and tomato leaves, perfect for this Green Olive Feta Dip.

I just tasted the new Spring/Summer menu at Heirloom, the signature restaurant at the Cape Grace hotel, and it’s honestly incredible.

Avocado Salad….but make it winter-friendly 🥑 ❄️

This one’s got bold flavours, creamy avo and zesty lemon-honey dressing to brighten up those grey days.

Quick to prep, easy to love and honestly, who says salads are only for summer?

Ingredients:
🥑 2 Ripe Avocados
🍅 200g Exotic Tomato Mix
🧅 1 Red Onion
- - Petite Crimson Shoots

🍋 Juice of 2 Lemons
🍯 2 Spoons of Honey
- - 3 Tablespoons of Olive Oil
🧂 Salt
- - Pepper to taste

Wash the exotic tomatoes and cut them in half. Remove the skin and pip and cut the avocado cubes. Peel the red onion and cut it into thin slices.

For the dressing:
In a small bowl, mix lemon juice, honey, olive oil, salt and pepper. Mix until all the ingredients are combined and the dressing is emulsified.
