Here's a simple, hearty soup recipe If you're using the Lion Assorted Lentils Soup 4-in-1 Mix. Makes about 4–6 servings.

Ingredients

1 cup Lion Assorted Lentils Soup Mix
1 tbsp oil or butter
1 onion, diced
2 cloves garlic, crushed (optional)
1 litre (4 cups) stock or water
1 packet tomato & onion mix (or 2 fresh tomatoes, chopped)
1 tsp mixed herbs
Salt and pepper to taste

Method
Rinse the lentil mix well.
Heat the oil in a pot and sauté the onion until soft.
Add the garlic and cook for another minute.
Add the tomato & onion mix and cook for 2–3 minutes.
Stir in the lentils, herbs, and stock/water.
Bring to a boil, then reduce to a gentle simmer.
Cook for 45–60 minutes, stirring occasionally, until the lentils are soft.
Add extra water if it becomes too thick.
Season with salt and pepper to taste.
For a smoother soup, blend part or all of the soup once the lentils are tender.

Serve with toasted bread and a sprinkle of cheese if you'd like something extra cozy for winter. 🍲
