Quick & Easy Cinnamon Rolls

I am all for something oh so gooood, but I also love it when it's quick and easy!

I've always wanted to make cinnamon rolls, but I'm going to be honest... I don't like making or kneading dough. Is it just me??

Once again, trusty "winkel deeg" came to my rescue!

Here's what I did:

Let the dough rise in the packet.
Once it had doubled in size, roll it out into a rectangle.
Spread over melted butter and brown sugar (I added plenty of cinnamon too!).
Roll it up, cut into rounds and place them into a sprayed baking dish.
Bake at 180°C for 20 until beautifully golden.

While the rolls are baking, make your cream cheese frosting. I may have gone a little overboard with mine, so don't use quite as much as I did! (see photo) Just spread it over the warm rolls and enjoy every bite.
If you'd rather make your own dough from scratch, here's a recipe you can follow.

Homemade Cinnamon Roll Dough

Ingredients

• 480 ml cake flour
• 5 ml salt
• 125 ml caster sugar
• 10 g instant yeast
• 1 extra-large egg
• 80 ml buttermilk
• 80 ml canola oil
• 125 ml warm water

Filling

• 80 g butter, softened
• 180 ml light brown sugar
• 30 ml ground cinnamon
• 30 ml cornflour

Cream Cheese Frosting

• 250 ml icing sugar
• 230 g plain cream cheese (of your choice), softened
• 60 g butter, softened
• 10 ml lemon juice
• 5 ml vanilla essence
• 60 ml milk

Method

1. Mix the flour, salt, sugar and yeast together.
2. Whisk together the egg, buttermilk, oil and warm water.
3. Add the wet ingredients to the dry ingredients and mix into a soft dough.
4. Knead for 5 minutes, cover and leave to rise until doubled in size.
5. Mix together the brown sugar, cinnamon and cornflour.
6. Roll the dough into a rectangle, spread with softened butter and sprinkle over the filling.
7. Roll into a log, slice into 12 rolls and place into a lined or greased baking dish.
8. Leave to rise again until doubled.
9. Bake at 180°C for about 20 minutes, or until golden.
10. Beat together all the frosting ingredients until smooth, adding the milk until you reach a thick but pourable consistency.
11. Spread or drizzle over the warm cinnamon rolls.

These disappeared in no time in our house... and I can definitely see myself making them again! I will even try make them smaller, more bitesize.

Baked Brie with Salami, Hot Honey & Crispy Onions

Sometimes the best recipes happen by accident... and this was definitely one of them!
Creamy baked brie, salami, crunchy cashews, crispy fried onions, and a drizzle of hot honey come together to create the perfect sweet, salty, crunchy bite. Served with warm toasted ciabatta, it's the kind of snack that disappears before you know it.

Ingredients

• 1 Brie wedge
• Salami (or your favourite cold cut)
• Hot honey
• A handful of raw cashew nuts
• Crispy fried onions
• Fresh ciabatta
• Olive oil spray

Method

1. Place the Brie in an ovenproof dish.
2. Top with the salami, cashews, and crispy fried onions.
3. Bake until the Brie is soft, gooey, and irresistible.
4. Finish with a generous drizzle of hot honey.
5. Slice the ciabatta, lightly spray with olive oil, and toast in a hot pan until golden and crispy.
6. Serve immediately and enjoy every cheesy, crunchy bite!
Make it your own! Add whatever you have on hand—pecans, walnuts, bacon, fresh herbs, dried cranberries, or even figs would all be delicious. Sometimes the best recipes come from using what's already in the pantry.
Perfect for rugby afternoons, weekend gatherings, or as a crowd-pleasing starter before dinner. Just don't expect any leftovers!

Baconnaise... because every burger deserves something extra!

Friday nights are Burger Night in our house, and if you're making homemade burgers tonight, you have to try this Baconnaise. Trust me... once you've had it, you'll want to put it on every burger!
A juicy homemade beef patty, melted cheese, and a generous spoonful of this smoky, creamy baconnaise is the perfect combination.

One little tip: Do yourself a favour and grab some brioche burger buns from your local store. They make all the difference!

Baconnaise Recipe

Ingredients:

• 2–3 rashers bacon, cooked until nice and crispy
• ½ cup mayonnaise (I use Nola Ultra Creamy or B-well Thick & Creamy)
• 1 tbsp Dijon mustard
• 1 tsp fresh lemon juice
• ½ tsp garlic powder
• ½ tsp smoked paprika
• Salt, to taste
• Black pepper, to taste

Method:

Finely chop or crumble the crispy bacon, then mix it together with all the remaining ingredients until well combined.

Spread generously on your favourite burger and enjoy!

Do you know what a Pinsa is?

One of my favourite things is cooking for the people I love. There's something so rewarding about seeing friends and family gather around the table, enjoying a meal made with love. This time, my son joined in the kitchen, and my husband (who loves anything from classic comfort food to trying something completely new) was right there too. It turned into one of those afternoons that remind you food is about so much more than eating.
This time we made Pinsa.

What is Pinsa?

Pinsa is a traditional Roman-style flatbread that's lighter and airier than a regular pizza. The dough is made with a blend of flours, a high hydration, and is slow-fermented, giving it a crispy outside, a soft, fluffy inside, and an incredible flavour.

Homemade Pinsa Dough Recipe

Ingredients

• 400g bread flour
• 100g rice flour
• 50g soy flour (or chickpea flour)
• 10g salt
• 5g instant dry yeast
• 420ml cold water
• 15ml olive oil

Method

1. Mix the flours and salt together.
2. Dissolve the yeast in the cold water and add to the flour.
3. Mix until combined, then add the olive oil.
4. Knead until smooth (about 8–10 minutes).
5. Cover and refrigerate for 24–48 hours.
6. Remove from the fridge 2–3 hours before baking.
7. Divide into small portions, gently shape into ovals, add your favourite toppings and bake on a hot pizza stone at the highest oven temperature until golden and bubbly.

Or... keep it simple!

You don't have to make the dough from scratch to have fun. Grab some “winkel deeg”, prepare a variety of toppings, and let everyone create their own masterpiece.
The best part? They're small, quick to cook, and as each one comes off the pizza stone, simply slice it up and enjoy while the next one bakes. It's the perfect way to spend time together around the braai or pizza oven.
Mix and match your favourite toppings, get creative, and don't be shy with the cheese!

I have recently re-discovered crispy onions and it was so good on my mushroom and ham Pinsa.
