🍝 NEW RECIPE ALERT 🍝

Life has been a bit cuckoo in the coco but I don’t think anything beats a latergram worthy meal post. Especially when it’s low calorie adapted for those high protein, low cal foodies out there!
Give this cheat β€œMarry-me-chicken” pasta a try !!

Ingredients:
Penne pasta dry 75g
Boneless skinless chicken breast 150g
1 chopped onion
Tomato paste 1 Tbsp 16g
Fat free greek yogurt 100g
Fresh basil
Sundried tomatoes 20g
Crushed dried chilli flakes
Garlic
Salt and pepper to taste
Olive oil drizzle 5ml

Measure out your pasta and cook till al dente and drain. Drizzle with a little olive oil and leave to slightly cool. Measure out or weigh your appropriate chicken portion and cube, flash fry in a drizzle of olive oil pan till browned. Add your onion and garlic with sun dried tomatoes and chilli flakes and cook through till browned. Toss in your tablespoon of tomato paste and 100g of Greek yogurt. Cook for 5 mins uncovered. Before serving stir in fresh basil, add salt and pepper to taste. Serve over portioned pasta and enjoy 🍝

Fluffy vanilla cupcakes topped with creamy vanilla icing + choc drops 🀍🍫 Simple, sweet, and made with love!

✨ Vanilla Cupcakes (x24):
β€’ 3 cups flour
β€’ 3 tsp baking powder
β€’ Β½ tsp salt
β€’ 1 cup butter (soft)
β€’ 2 cups sugar
β€’ 4 eggs
β€’ 4 tsp vanilla
β€’ 1 cup milk

Cream butter + sugar, add eggs + vanilla. Mix in dry + milk. Bake at 180Β°C for 15 mins.

🍦 Vanilla Icing:
β€’ 250g butter (soft)
β€’ 4 cups icing sugar
β€’ 1–2 tbsp milk
β€’ 2 tsp vanilla

Beat till smooth & fluffy. Ice cooled cupcakes + finish with choc drops!

It’s been a while since I posted here. Life has been full and fast-paced, and while I’ve still been whipping up yummy treats and delish meals, I just haven’t made posting a priority. πŸŒͺ️

But today, I caught a little breather β€” and what better way to come back than with a birthday bake! πŸŽ‰ My baby turns 15 this weekend (how?!), and she requested momma’s vanilla cupcakes with piped icing and chocolate sprinkles. Simple, classic, and made with so much love. 🧁✨

The scent of vanilla is filling the house and making us all drool β€” but we wait! πŸ˜„
