Life has been a bit cuckoo in the coco but I donβt think anything beats a latergram worthy meal post. Especially when itβs low calorie adapted for those high protein, low cal foodies out there!
Give this cheat βMarry-me-chickenβ pasta a try !!
Ingredients:
Penne pasta dry 75g
Boneless skinless chicken breast 150g
1 chopped onion
Tomato paste 1 Tbsp 16g
Fat free greek yogurt 100g
Fresh basil
Sundried tomatoes 20g
Crushed dried chilli flakes
Garlic
Salt and pepper to taste
Olive oil drizzle 5ml
Measure out your pasta and cook till al dente and drain. Drizzle with a little olive oil and leave to slightly cool. Measure out or weigh your appropriate chicken portion and cube, flash fry in a drizzle of olive oil pan till browned. Add your onion and garlic with sun dried tomatoes and chilli flakes and cook through till browned. Toss in your tablespoon of tomato paste and 100g of Greek yogurt. Cook for 5 mins uncovered. Before serving stir in fresh basil, add salt and pepper to taste. Serve over portioned pasta and enjoy π
