Gingerbread is always part of my Christmas cookie collection. Today I made some, and used a stamp to create delicious tasting cookies.
For cookies that look uniform and bake evenly, I always use spacers to roll out the dough. Also, to prevent having to use extra flour, I find it best to roll out the dough between two sheets of parchment paper. This dough is the same one that I used to make a Gingerbread house, about 6 years ago. It spreads minimal, keeps it shape once cooled and tastes great.

Malva Pudding is a delicious South African dessert, served with cream or ice cream. Often made in a serving dish where portions are served from. To make these individual ones, I used square shaped muffin tins.
Decorated with orange zest and served with custard, that's how we had it on our family table today.

I have a few chocolate cakes recipes that I regularly use. Each tried and tested over many years and carefully chosen for a particular event.
This Millionaire's cake is a boozy cake, and more specific, you add Brandy.
In my opinion, that is where it gets its name from. Having a cake with whole nut chocolate and brandy, makes you feel like a million dollars, hence, Millionaire's cake. It could also be the butter and chocolate, adding up to millions of calories. 😂

The occasions I would choose this one for, would be a wedding anniversary cake for two, group of adult friends get together, or ladies tea event.
All in all it uses 4 tablespoons of Brandy...which you can double.
I often leave the Brandy out altogether, with or without booze....this is a Millionaire's cake.
Chocolate with 50% cocoa content in the cake mixture is advised....I found that anything higher makes for a strong/deep chocolate flavour. If that is your preference, use the 70% cocoa content.
