Easy PeasyThai Red fish Curry

- 2 tablespoons olive oil
- 1 red onion (chopped)
- 1 x 50 g packet of SATN Thai red curry paste
- 1 tin reduced fat / normal coconut milk
- 1 punnet mushrooms (chopped)
- 1/2 a red pepper (chopped)
- 2 hake fish fillets
- 1 packet baby Pak Choi
- roasted sesame seeds for garnish

Place the onion in a pan with the olive oil and fry until translucent: Add the SATN Thai red curry paste and fry for a further 1 minute. Add your red pepper and mushrooms into the pan. Pour in the coconut milk and bring to the boil. Turn temperature down and simmer gently for about 5 minutes. Finally stir in the hake fillets and Pak choi. Cook for a further 5 minutes until the fish gently flakes apart. Serve with our nutty brown basmati rice, fresh coriander and toasted sesame seeds!

Cozy up this weekend and make one of our delicious curries! This is one of my all time faves…our Cape Malay chicken curry. It is super simple to make and really is delicious! Serve with Spice and All things nice basmati rice and poppadums and fresh coriander!
