A cracked cake top doesn’t mean your bake is a fail, it still tastes amazing! But if you’re aiming for that smooth, bakery-style finish that’s perfect for frosting and decorating, here’s why it happens and how to fix it 👇
The #1 culprit is oven temperature. If it’s too hot, the top sets quickly while the inside is still rising, so the pressure pushes through and cracks the surface. Always preheat your OTG and stick to 160–170°C for most cakes.
Other common mistakes: overfilling the tin, so the batter has no room to rise evenly and forms a dome that splits. Using batter that’s too thick makes it harder to rise and creates cracks. Placing the cake too close to the top heating element bakes the surface faster than the center. And overmixing the batter develops gluten, making the cake dense and uneven.
Pro baker tip: If cracks keep showing up, reduce your baking temperature by 10°C and bake a few minutes longer. A slower bake = an even rise + a flat top.
