Sunday Roast Lunch

Roast Chicken served with yellow Rice, roast potatoes🥔, sweetcorn and Cheese gemsquash 🌽 honey glazed carrots, side salad and gravy 🥕

Recipe serves:5 to 6

Roast Chicken Recipe

10 to 12 chicken pieces
2 Tbs BBQ spice
1 Tbs chicken spice
Salt to taste
2 tsp Cayenne pepper
2 stems rosemary
100g melted butter
Juice of a half lemon

Method
In a bowl add spices, salt, lemon juice and melted butter.
Remove rosemary from stem and add.

Add butter marinade to chicken
Mix by hand until evenly covered. Rest for 30 minutes

Airfry for 190°C for 45 to 50 minutes depending on the size of the chicken pieces
or oven roast 220°C for 50 to 60 minutes. Halfway through the cooking process brush balance of the butter over chicken.

Honey glazed carrots 🍯🥕

Steam carrots with 2 tsp sugar until 80% cooked.

To a warm pan add 2 tbs olive oil and 2 tbs butter.
Add cooked carrots followed by 2 tbs honey 🍯
Roast in pan until liquid reduced.

Roast potatoes

Parboil potatoes until 80% cooked.
Toss in roast chicken marinade.
Roast together with chicken

Sweetcorn & Cheese gemsquash

Cut gemsquash in half and steam for 15 minutes

To a bowl
Add 1 can cream style sweetcorn, 1 cup grated cheese, 1 Tbsp melted butter.

Mix and fill into the gemsquash.
Top with grated cheese.
Bake in a preheated oven @180°c until melted or crusty top.
