Full disclosure, Sue is not a morning person. Yes I know being a baker is perhaps not the greatest of professions for a person like me. Before 08:00 ish I struggle with words, I can however growl, nod and sip lots of coffee. Being a sourdough baker comes with a unique set of challenges because of the many variables that influences it especially on the scale that we do it. BUT when a loaf and a cake comes out like these did ( just past 4am ) it makes it all worth it, it makes me find words a little earlier, lol

My favourite part of making these is now, right before we wrap and package it🥳 every cake comes out with it's own unique imperfections just like our bread. It reminds me that this is a real sourdough fruitcake made with real ingredients by real hands in a small bakery. It's not mass produced in a factory setting. Love what we do and create.
P. S I don't eat christmas cake, I'm not fond of the aftertaste or shop fondant BUT ours I've devoured before it had a chance to pose for photo 🥳🤩
