Cornish curry by Ravisha Therusha Chinnappa

1kg/half Cornish pieces
1 onion diced
2 tomatoes liquidised
2 sprig curry leaves
2 cinnamon stocks
2 bay leaves
2 aniseed
2 pods elachi
1 tbspn ginger and garlic
3 potatoes cut in halves
40 ml oil
1 tspn tumeric powder
1 tspn dhania powder
1 tspn jeera powder
1/2 tsp jeera seeds
Salt to taste
1lt water
3 tbspn on the spot masala medium variant

Method:
1. Heat oil,then add onion,jeera seeds,cinnamon,bay leaves,aniseeds ,elachi
2. Once onions are translucent add tumeric and then add tomatoes and allow to cook
3. Cook tomatoes for about 15 mins then add masala;jeera and dhania powder
4. Allow to simmer for 5 minutes
5. Add your Cornish pieces and give a good toss. Add garlic and ginger curry leavesand Allow to cook and add a little water at a time until chicken is almost soft. I cooked my Cornish for about 1,5 hours
6. Add potatoes when chicken is almost done and add a little water as needed to allow potatoes to cook. I cooked a further 30mins after adding potatoes and added water as and when needed
7. Once potatoes are cooked garnish with coriander and enjoy with roti,bread or rice.
