Durban-Style Crab Curry

A rich, fiery South African Indian curry with bold masala, tomatoes, curry leaves, and plenty of gravy for dipping bread or serving with rice.

Ingredients
For the crab
1 kg crab pieces (mud crab or blue swimmer crab)
Β½ tsp turmeric
1 tsp salt
Juice of Β½ lemon

For the curry
4 tbsp oil
2 medium onions, finely sliced
2 tbsp ginger-garlic paste
2 tomatoes, chopped
2 tbsp tomato puree
2–3 green chilies, slit
10–12 curry leaves
1 tsp mustard seeds
1 tsp cumin seeds

Spice mix
2 tsp Kashmiri chili powder
1 tsp hot chili powder
1 tsp turmeric
2 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1 tsp black pepper
Β½ tsp fennel powder

Optional Durban touch
1 medium potato, cubed
1 tsp tamarind pulp or vinegar
Fresh coriander

Method
1. Prepare the crab
Wash the crab well. Rub with turmeric, salt, and lemon juice. Leave for 15–20 minutes.

2. Make the masala
Heat oil in a heavy pot.
Add:
mustard seeds
cumin seeds
curry leaves
Let them crackle.
Add onions and cook until deep golden brown. Durban curries usually have well-browned onions for deeper flavor.
Stir in ginger-garlic paste and green chilies. Cook 2 minutes.

3. Add spices
Add all powdered spices with a splash of water so they don’t burn.
Cook until the oil separates.

4. Tomato base
Add chopped tomatoes and tomato puree.
Cook until thick, dark, and glossy.

5. Cook the curry
Add potatoes if using. Pour in about 2 cups hot water.
Simmer 10 minutes.
Add crab pieces and mix gently.
Cover and cook 12–15 minutes until the shells turn bright red and the meat is cooked.

6. Finish
Add tamarind or vinegar for slight tanginess.
Sprinkle garam masala and fresh coriander.
Rest 10 minutes before serving.

Durban Curry Tips
Durban curries are hotter than typical Indian restaurant curries.
Use a mix of Kashmiri and hot chili for both color and heat.
Slightly oily gravy is authentic.
Crab releases sweetness into the sauce, so avoid too much cream or coconut milk.
Optional Seafood Upgrade

You can add:
prawns
mussels
firm fish pieces
during the last few minutes for a full seafood curry experience.
