🧀✨ Crispy Mozzarella Chicken with Fresh Lemon Salad
Looking for a quick, delicious dinner that feels fancy but takes minimal effort? This crispy baked chicken (or air-fried!) topped with gooey mozzarella and a zesty fresh salad is pure weeknight magic. 🌿🍋
🐔 You’ll need:
For the Chicken:
▪️ 2 chicken breasts
▪️ Kosher salt & pepper (or your favourite seasoning)
▪️ 1 cup plain yogurt
▪️ 1 tbs Dijon mustard
▪️ 1 cup (about 100g) panko breadcrumbs
▪️ ¼ cup (25g) grated Parmesan cheese
▪️ Olive or avocado oil spray
▪️ 1 cup (100g) shredded mozzarella
For the Salad:
▪️ Mixed lettuce (or greens of choice)
▪️ Cherry tomatoes, halved
▪️ Shaved Parmesan – optional but delicious
▪️ Fresh lemon juice
▪️ Olive oil
▪️ Salt & pepper
👩🍳 How to make it:
1️⃣ Preheat your oven to 220°C (convection 210°C) and line a baking tray with a wire rack. Spray with oil.
(👉 Air fryer? Go for it — 200°C for about 10–12 minutes works perfectly!)
2️⃣ Flatten the chicken between two sheets of plastic wrap until about 0.5–1 cm thick. Season both sides.
3️⃣ Mix it up:
In one bowl, whisk the yogurt and Dijon mustard.
In another, combine panko crumbs and Parmesan.
4️⃣ Coat the chicken:
Dip each piece into the yogurt mix, then press into the crumb mixture until fully coated.
5️⃣ Bake for 12–15 minutes until golden and cooked through.
Top with mozzarella, then broil (or grill) for 2–3 minutes until bubbly and lightly browned.
6️⃣ Toss the salad:
Mix lettuce, cherry tomatoes, and Parmesan with lemon juice, olive oil, salt, and pepper.
7️⃣ Serve your crispy chicken with a generous handful of fresh salad on top — and enjoy that cheesy crunch! 😋
