It is one of the earliest varieties to bud, so timing matters. Prune too soon and the vine may be tempted into the season before we are ready for it.

At this time of year, patience is not a virtue. It is a viticultural requirement.

Reflection Chardonnay is a wine that comes from our south-facing Chardonnay block overlooking the dam that gives the wine its name. The site brings coolness, patience and a natural precision that we have come to value deeply.

Summer is a fine time to stay on the farm - and this is your reminder that summer holidays are booked in the winter.

Our self-catering cottages sit close to the vineyards and the dam. Guests can wake to the valley, walk the farm, visit the tasting room and end the day with a braai and a crisp glass of wine.

Little Flirt may be bright and fresh, but she is certainly not fragile. There is fruit, texture and that distinct Elgin line which makes her more than capable of standing beside smoke, flame and something well charred from the fire.

Pruning is one of the more decisive tasks of winter 🌿

Each cut carries consequence, shaping the vine for the season ahead and influencing the quality of fruit we will eventually bring into the cellar. It requires experience, patience and a clear understanding of what each block is capable of giving.

The vines may appear dormant, but this is where much of the next vintage begins.

International Pinot Noir Day seems a fitting excuse to open a bottle of our Braveheart Pinot Noir - particularly with what appears to be the early arrival of spring 🍷🌿

Lightly chilled, it is a lovely way to welcome the change of season: bright, fresh and that distinct Pinot Noir character.

Our Braveheart Pinot Noir was a Class Winner at the National Wine Challenge, which is certainly another good reason to put a bottle in the fridge.

Winter gives the vineyards a different sort of presence.

The leaves have fallen, the rows are exposed, and the structure of each vine is there for us to assess without distraction. It is a season of repair and careful decision-making, long before the energy of spring returns.

For us, winter is not an interruption. It is part of the discipline required to make wines of integrity.

On Wednesday, 19th August - we will be showcasing Paul Wallace Wines tasting at Oregano Bakery & Pantry from 6pm, and personally taking you through a selection of our wines and sharing some of the stories behind the farm, the vineyards and the family business.

Your R350 ticket includes the tasting as well as a grazing board to enjoy alongside the wines. We would be delighted to have you join us for the evening! 🍷

Paul has spent most of his working life in vineyards. There are few matters on this farm that Paul will accept from a distance.

Walking the rows remains one of the most important parts of how we farm. It is where decisions are made about pruning, canopy, soil, vigour, fruit load and the general state of each block before a single grape reaches the cellar.

There are not many shortcuts in viticulture. Most answers are found with boots on, secateurs in hand, and enough time spent looking closely.
