Paul and Nicky Wallace purchased their 25 hectare farm in September 2003 and immediately set out to create their own little piece of heaven. Paul is a viticultural consultant and here at last he could practise what he has advised and encouraged other farmers to do in their vineyards. It has long been Paul’s belief that the cool-climate region of Elgin, previously best known for its apples and pear

s, is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.

Visitors are often greeted by our three black Labradors, who have made the farm their own. They are part of the daily rhythm here - present in the vineyards, the cellar, and the spaces in between. We look forward to welcoming you, and they will be there to do the same.

A visit to our tasting room offers a quiet, considered introduction to Paul Wallace Wines. Set on the farm, it is a place to take time, taste through the range, and understand how each wine has been shaped by site, season, and careful decision-making.

Conversations tend to unfold naturally, often with one of the family present, and the experience is guided as much by the vineyard and cellar as by the glass in front of you. It is an opportunity to engage with the wines in the context in which they were made.

Nicky’s favourite wine is, without question, the Crackerjack Bordeaux Blend. Created initially as an indulgence for the lady of the house, this wine brings together the collective vision of Paul, Nicky, and Bobby 🍷

Blended from Merlot, Cabernet Franc, Cabernet Sauvignon, and Malbec, it showcases both the versatility and finesse of Elgin. Structured yet generous, it is a wine that rewards time in the glass and reflects the collaborative spirit behind its creation.

Paul Wallace Wines remains very much a working farm. Vineyards sit alongside apple orchards, and animals move freely through the property, as they always have. This coexistence shapes the pace of our days and anchors the wines in something real, lived and enduring.

Many of our decisions are made together - often around a barrel or a table, with time taken to talk things through properly, with a bottle open and the future under discussion. Each of us brings a different perspective, and the wines benefit from that exchange.

We hope that sense of shared intent is evident when our wines are opened at your table.

Paul’s favourite wine remains the Black Dog Malbec - a wine that also earned Platter’s Malbec of the Year recognition. He appreciates its structure, depth, and the way it captures both power and restraint.

It is a wine that speaks honestly of its origins and rewards careful cellaring, yet remains generous and approachable when young.

On Chardonnay day, we celebrate the 2025 Paul Wallace Reflection Chardonnay - which marks the ninth vintage of this wine. Produced from a 0.85-hectare south-facing vineyard planted on Bokkeveld shale, it shows purity, structure, and natural elegance.

Citrus-driven in youth, with evolving complexity and textured length, it is a clear expression of cool-climate Elgin Chardonnay.
