Get the kids excited about pilchards again with these delicious fish cakes! They’re easy to make, and you can get the little ones involved for a fun, hands-on cooking experience. 😊

Ingredients:
400g can of Pilchards
1 onion, grated
½ green pepper, diced
salt & pepper to taste
1 egg
50g feta cheese, diced
50g breadcrumbs
cake flour, for dusting
oil, for frying

Method:
1. Drain the sauce from the pilchards and place the fish in a bowl.
2. Open up the pilchards and remove the backbones.
3. Add the grated onion, diced green pepper, salt and pepper. Mix well to combine.
4. Add the egg, feta cheese and breadcrumbs, then mix until well combined.
5. Shape the mixture into small balls and lightly coat each one in cake flour.
6. Heat a little oil in a pan over medium heat.
7. Fry the fish cakes for 5–10 minutes on each side, or until golden brown and cooked through.
8. Serve immediately with a fresh salad and enjoy!
