Two private chef events. Two show-stopping menus by the Verve Caterers & Events team.

At Verve, we believe high-end luxury dining shouldn’t be limited by dietary restrictions. We recently curated and hosted two distinct, bespoke family-style events that were entirely dairy-free, wheat-free, and sugar-free.

🥩 Event 1: A Meat Lover’s Feast

To Start: Beef Carpaccio & Vitello Tonnato

Main Course: Wagyu Sirloin, Ribeye, and Fillet served with chimichurri, sweet potato mash, cauliflower purée, and crisp seasonal salads.

Dessert: An oatmeal cake with chocolate & vanilla.

🦪 Event 2: The Ocean’s Bounty

To Start: Oysters with mignonette, poached Lobster, Ceviche with a three-citrus dressing, Namibian Crab salad, and Caviar with buckwheat blinis.

Main Course: Roasted linefish with lemon & fried capers, roasted baby beets, asparagus, & broccoli spears.

Dessert: Vegan Key Lime Pie.

Last night, we had the pleasure of catering a sophisticated cocktail soirée in the heart of Constantia for an intimate gathering of 40 guests — and what a feast it was! 🍸

From the first bite to the last indulgence, every detail was crafted to impress:
🥢 Delectable Canapés:
Crispy Vegetarian Spring Rolls, Chicken Gold Bags, Duck Spring Rolls with plum dipping sauce, and Smoked Springbok Carpaccio finished with rocket pesto & truffle mayo… paired beautifully with Teriyaki Salmon Skewers and fresh Oysters topped with raspberry vinegar & chives.

🍲 Signature Bowl Foods:
Guests enjoyed hearty, flavour-packed favourites including:
* Beef Fillet with creamy exotic mushrooms & dauphine potato
* Green Thai Chicken Curry served on fragrant basmati rice

WHEN DONE RIGHT, grilled vegetables bring colour, sweetness, and a tender-crisp bite that plays perfectly against the richness of grilled meat. 🍖

START BY SEARING the vegetables until they've picked up some colour, then get a braising pan going with your root vegetables, tap water, some fat, and seasoning, letting them cook low and slow until just tender but still firm to the bite. 🥕

DURING THIS TIME, they pull in moisture and soften partway through, which means when they hit the heat, the outside can caramelize and char the way they're supposed to, without the inside lagging behind. The result is something with genuine depth: smoky and charred on the outside, soft and rich in the middle. 🔥

THERE'S PLENTY OF ROOM to push the braise even further, and the easiest place to start is the liquid itself. Water works, but chicken or vegetable stock (preferably homemade, if you have the time) is the smarter starting point. It gives the vegetables a savory foundation that carries through to the final dish. From there, smashed garlic, thyme sprigs, or a bay leaf can only make it better. 🍃

THE FAT, TOO, can use an upgrade. Reach for something with flavour, extra-virgin olive oil or butter both work well. They make everything taste richer while pulling in all the aromatics you added to the braise. 🧈

AND LAST BUT not least, don't skip the seasoning before the grill. Salt and pepper cover the basics, but smoked paprika, Aleppo pepper, and celery seed each bring something worth having. Add a light coat of oil right before the grates, and you've built a side dish with enough depth that it stops feeling like a side dish at all. 😀

GRATING GINGER IS one of the easiest things you can do in the kitchen... up until you're mid-recipe with ginger bits and bobs wedged in every tooth of the grater and juice running down your wrist. 😬

THE ROOT ITSELF is easy enough to work with. It's what comes after that gets old fast. Cleaning ginger out of a box grater or Microplane is its own separate ordeal, and at some point, it stops feeling worth the effort. ❌

THE FIX IS surprisingly low-tech: ditch the grater and smash the ginger under cling wrap instead. 🫚

PEEL YOUR GINGER, then slice it into thin rounds across the grain. Lay the slices on your cutting board, drape cling wrap over the top, and press down hard with the flat side of your knife. One firm push is usually all it takes, the ginger collapses into fine, grated-looking bits almost instantly. Cleanup is just tossing the wrap. ✅

THERE'S A FLAVOUR upside here, too. Smashing ruptures the ginger's cell walls, pushing more of its natural oils out into the open, which means a sharper, more forward heat in the finished dish for the same amount of ginger. Zero extra effort required. 😀
