Waste not Want not…Using up the last of the vegetables in the fridge and savoury muffins came to mind because I had some courgettes/baby marrow/zucchini - what ever you call them I love em 😍 They are quite a versatile vegetable cooked or raw and low in carbs 💃🏼

What do you do when you have a craving but don’t have “All” the ingredients? Improvise…use up what is available and make something amazing…it’s always fun creating something with left overs and bits and bobs in the veggie box.
I always have staples ie. Onions, cheese etc I normally have eggs but used them yesterday when I made a fried egg 🍳 savoury rice for hubby.
My craving today was a chicken wrap…didn’t have a Gluten free low carb wrap so made my own with sweet potato (🍠 from my garden)…grate sweet potato with grated onion and a few chillies(🌶️ from my garden) to combine I didn’t have eggs I used some frozen egg whites I had in the freezer and a few tablespoons of psyllium husk. Shaped and fried in a pan with macadamia oil then finished off cooking in the oven.
Every wrap needs a sauce so luckily has some cucumber and made a delicious Tzatziki sauce…always squeeze out the liquid from the cucumber before mixing with yoghurt. I added some fresh mint and my queen of herbs tarragon…really yummy addition.
