It's simple, sweet and tastes like home 🏡

TRADITIONAL SOUTH AFRICAN MELKKOS

Ingredients:
• 2 C First Choice Full Cream Milk
• 1 cinnamon stick
• 1/2 C cake flour
• 1.5 Tbsp First Choice Cold Butter (plus extra for serving)
• 1/4 tsp salt

For the Cinnamon Sugar:
• 2 Tbsp sugar
• 1 tsp ground cinnamon

Directions:
1. Pour the milk and the cinnamon stick into a saucepan. Bring to a gentle boil over medium heat, stirring occasionally to ensure the milk doesn't burn.
2. While the milk heats, combine the flour and salt in a bowl. Rub the cold butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
3. Once the milk boils, reduce the heat to low. Remove the cinnamon stick (or leave it in for a deeper flavour). Slowly sprinkle the flour-butter crumbs into the milk, whisking constantly to avoid large, raw lumps.
4. Continue stirring with a whisk or wooden spoon for about 10 minutes. The mixture should thicken into a soft, creamy custard-like consistency. Ensure the flour is completely cooked through.
5. Ladle into warm bowls.
6. Top with a generous sprinkle of cinnamon sugar and an extra k**b of butter to melt over the top.

Perfect for slow weekends or a tea-time treat 🫐

BAKED DAIRY SNACK & CUSTARD BLUEBERRY CAKE

Ingredients:
• 375ml First Choice UHT Milk
• 2,5ml vanilla seeds
• 80ml castor sugar
• 2 eggs
• 55ml cornflour
• 40g First Choice Butter

Dairy Snack Cake:
• 125ml castor sugar
• 60ml sunflower oil
• 1 egg
• 125ml First Choice Vanilla Flavoured Dairy Snack
• 5ml vanilla extract
• zest of 1 lemon
• 250ml flour
• 10ml baking powder
• 1ml salt
• 250g blueberries
• 375ml First Choice UHT Milk
• 2,5ml vanilla seeds
• 80ml castor sugar
• 2 eggs
• 55ml cornflour
• 40g First Choice Butter

Direction:
1. Preheat the oven to 170°C, then grease and line a 24cm springform cake tin with baking paper.

For the custard:
1. Heat milk and vanilla until hot.
2.Beat the eggs, castor sugar and vanilla then whisk in the cornflour.
3. Slowly add the hot milk while whisking continuasly. Return to the saucepan and cook until it starts to thicken and boil.
4. Remove from the heat and mix in the butter. Whisk until smooth, scrape into a bowl and cover with cling wrap touching the surface.

For the cake:
1. Whisk together the oil, castor sugar, egg, vanilla, zest and yoghurt. Sieve together the flour, baking powder and salt and add to the egg mixture.
2. Mix gently together to make the batter. Spoon the batter into the prepared cake tin.
3. Whisk custard until smooth and divide in two. Spoon dollops of one half of the custard around the edges of the cake batter then spread inwards with an offset spatula to smoothen.
4. Scatter over half of the blueberries.
5. Mix the remaining blueberries with the remaining custard and spread onto the cake.
6. Bake for 40 minutes.
7. Cool cake completely on cooling rack in the cake tin.
8. Remove from cake tin and serve at room temp with First Choice Whipped Cream or more Vanilla Dairy Snack.

This dessert is proof that the best things in life are simple 🍫

WHIPPED VANILLA ECLAIR LAYERED PUDDING

Ingredients:

The Ganache:
* ½ C First Choice Cream
* 1 C chocolate

The Filling:
* 1 box vanilla pudding powder
* 3 C First Choice UHT Full Cream Milk
* ½ C First Choice Whipping Cream

Layering:
1–2 packets of coconut biscuits

Directions:

1. Whisk the vanilla pudding powder with 3 cups of milk in a bowl until smooth and slightly thickened.
2. Refrigerate for about 10 minutes and allow the pudding to set properly.
3. Pour the ½ cup pouring cream into a bowl and microwave for 1 minute.
4. Pour the hot cream over the chocolate & stir until well combined
5. Create an emulsion with the chocolate and cream.
6. Whisk until smooth and glossy. Set aside to cool slightly.
7. Once set, gently fold in ½ cup whipped cream to make it extra light and creamy.
8. In a round dish, place a layer of crushed biscuits at the bottom. Spread a layer of the pudding mixture over the biscuits and repeat the layers as desired and finishing with the pudding layer on top.
9. Pour the chocolate ganache evenly over the top.
10. Refrigerate for at least 4 hours, or overnight for the best results.

Serve in a bowl and enjoy!

Who knew cottage cheese was the secret to the perfect tuna spread?

EGG-BOOSTE TUNA WHIP

Ingredients:
* 1 cucumber
* 3 boiled eggs
* 200g of tuna, drained
* 2 Tbsp First Choice Cottage Cheese
* Spices to taste

Directions:
1. Boil the eggs, let them cool and chop finely. Peel the cucumber and dice it into small pieces.
2. Drain the excess liquid from the tuna.
3. In a bowl, combine the tuna, chopped eggs and cucumber.
4. Add the cottage cheese and mix everything well until combined.
5. Season with spices to taste and mix again.

Top tip: this spread tastes especially good on wholegrain bread.

A little bit of buttery, golden goodness to brighten up your day ☀️

GOLDEN GLAZE BUTTER PUFFS

Ingredients:

Sauce:
* ¾ C brown sugar
* ⅓ C golden syrup
* 50g First Choice Butter
* 2 C water

Butter Puffs:
1½ C self-raising flour
¾ C First Choice Milk
50g First Choice Butter, melted
1 Tbsp golden syrup

Directions:
1. In a large pot, combine the brown sugar, golden syrup, butter and water. Place over medium heat and stir until the butter melts and the sugar dissolves.
2. Bring the mixture to a gentle boil. You want it bubbling steadily, like a caramel hot spring.
3 In a bowl, combine the self-raising flour, milk, melted butter and golden syrup. Mix gently until a soft dough forms. The dough should be soft and slightly sticky.
4. Scoop spoonfuls of the dough and carefully drop them into the simmering sauce.
5. As the dough cooks, gently spoon the sauce over the tops so they stay beautifully saucy. Cover with a lid and allow to simmer on low heat for about 15 to 20 minutes.
6. The dough will puff up and become fluffy while soaking up that golden syrup sauce.

Tip: Do not lift the lid too often. Let the steam do its work.
