Your kitchen is about to smell like heaven; it’s the "Apple Crumble" twist you've been searching for 🍏

APPLE CINNAMON ROLLS

Ingredients:
• 1.5 C First Choice Apple Crumble Double Cream Dairy Snack
• 500g puff pastry
• 2 Tbsp brown sugar
• 1 Tbsp cinnamon
• 1 large apple, diced and fried in 1 Tbsp First Choice Butter
* flour for dusting
* 1/4 C First Choice Milk for brushing

Directions:
1. Dust the puff pastry sheets with flour.
2. Cut each puff pastry sheet into 4 strips.
3. Spread a thin layer of dairy snack on each strip.
4. Make sure your diced apples are well-drained.
5. Evenly spread the apples onto the pastry.
6. Dust the sheets with cinnamon.
7. Sprinkle with brown sugar.
8. Roll up the strips.
9. Place the rolls on a lined baking tray.
10. Lightly brush the rolls with milk for a matte finish.
11. Bake at 200°C for 18-25 minutes.
12. Serve with Apple Crumble Dairy Snack.

The most tender chicken biryani...
It’s all in the marinades 🍛

SIGNATURE CHICKEN BIRYANI

Ingredients:
For the Chicken & Marinade
• 600g boneless chicken, cubed
• 400ml First Choice Plain Dairy Snack
• 50ml garlic & ginger paste
• 3 green chillies, chopped
• ½ lemon, juiced
• salt to taste

For the Spice Blend (Or simply purchase a Biryani spice blend)
• 1 star anise
• 2 bay leaves
• 1 tsp chilli flakes
• 2 tsp coriander
• 1½ tsp cumin
• 1 tsp fennel
• ½ tsp fenugreek
• 1 tsp mint flakes
• ½ tsp mustard seeds
• ½ tsp nigella seeds
• ¼ tsp nutmeg
• ½ tsp black pepper
• 8 cloves

For the rice
• 1½ C basmati rice
• 5ml turmeric

Whole Aromatics: 1 Cinnamon stick, 5 cardamom pods

For the Base & Garnish
• 1 large red onion, chopped
• 1 tomato, diced
• fresh mint, chopped for layering
• oil, for frying

Directions:
1. Bring a pot of water to a rolling boil. Add the rice, turmeric, cinnamon stick and cardamom.

Crucial Step: Cook until the rice is only 60% done (it should still have a firm "bite" in the center).

Strain immediately and set aside.

2. In a large bowl add the sliced chicken and then the Dairy Snack with the garlic/ginger paste, lemon juice, chillies, salt and that entire aromatic spice blend.

Rest: Let it marinate for 20–30 minutes (or up to 4 hours in the fridge for deeper flavour).

3. Heat oil in a heavy-bottomed pot. Fry the red onion until golden brown and crispy.

Save for later: Scoop out 60% of the onions and set aside for the garnish.

4. Add the diced tomato to the remaining onions in the pot and cook for 10 minutes until softened.

5. Add the marinated chicken (and all the sauce) to the pot. Simmer on medium heat for 45 minutes to 1 hour. The chicken should be tender and the sauce thickened into a rich gravy.

5. Empty the pot, leaving just a small layer of gravy at the bottom.

Layer 1: Half the chicken.
Layer 2: Half the rice.
Layer 3: A sprinkle of your fried onions and fresh mint.
Repeat until all ingredients are used.

6. Seal the lid tightly. Cook on the lowest heat possible for 30 minutes.

Serve hot and enjoy!

Through her self-published cookbooks, Around My Table and Experience Bo-Kaap, Fayruza is dedicated to preserving and sharing Cape Malay culinary heritage, celebrating both traditional dishes and the rich culture of the Bo-Kaap. Her passion infuses every dish with authentic flavours, storytelling and heartfelt tradition.

Creamy Cape Malay Chicken Curry

Prep Time: 20 minutes (plus 30 mins marinating)
Cook Time: 40 minutes
Makes: 4–6 Servings

Ingredients:

For the Chicken & Marinade
• 1 kg boneless, skinless chicken thighs, cut into bite-sized pieces
• 1 C First Choice Double Cream Plain Dairy Snack
• 1 Tbsp ginger
• 1 Tbsp garlic
• 1 tsp salt

For the Curry Base
• 2 Tbsp vegetable oil
• 2 large onions, finely chopped
• 1 stick cinnamon
• 3 cardamom pods, cracked
• 3 whole cloves
• 1 tsp whole coriander seeds
• 2 bay leaves
• 1 tsp cumin seeds
• 1 Tbsp mild Cape Malay curry powder
• 1 tsp turmeric powder
• 1 tsp ground cumin
• 2 tsp sugar

For the Sauce & Finishing
• 1 tin (400g) chopped tomatoes
• 1 C water
• 2 -3 medium potatoes, peeled and cut into big cubes
• ½ C First Choice Double Cream Plain Dairy Snack
• Fresh coriander leaves, for garnish

Directions:
1. In a large bowl with the chicken, add the First Choice Double Cream Plain Dairy Snack, ginger, garlic and salt. Mix together and marinate for 30 minutes.
2. Heat oil in a large pot over medium heat. Add whole spices (cinnamon, cardamom, cloves, bay leaves, cumin and coriander seeds) and fry for 1 minute until fragrant.
3. Add onions and sauté for 5-7 minutes until soft and golden brown. Stir in the ground spices and sugar. Cook for 1 minute to release the oils.
4. Add the marinated chicken and the marinade. Cook for 5–7 minutes, stirring to brown the meat.
5. Pour in the tomatoes, stock, and potatoes. Bring to a simmer. Reduce heat to low, cover, and cook for 25-30 minutes until potatoes are tender and the sauce has thickened.
6. Remove from heat. Stir in a ½ cup of First Choice Double Cream Plain Dairy Snack to create a velvety, mild finish.
7. Garnish the pot with a generous handful of fresh coriander.
Serve alongside warm, flaky roti or fragrant basmati rice.
Accompany it with a fresh sambal made of diced tomatoes, onions, and green chilies.
8. For an extra creamy touch, serve with a dollop of First Choice Double Cream Plain Dairy Snack.

The secret to the most tender beef stew? It’s in our Amasi!

AMASI BEEF STEW 🍲

Ingredients:
• 800g beef stewing cuts, cubed
• 2 C First Choice Amasi
• 2 onions, chopped
• 3 tsp garlic and ginger, minced
• 1 tsp turmeric
• 7g curry powder to taste
• 2 Tbsp salt
• 3 tsp pepper
• 1 Tbsp oil
• ½ C beef stock
• fresh parsley, chopped
• bread, for serving

Directions:
1. Mix the beef and amasi in a bowl. Marinate for at least 1 hour or overnight for the best flavour.
2. Heat the oil in a pot and fry the onions until golden. Stir in garlic, ginger, turmeric and curry powder for 30 seconds.
3. Add the beef and all the amasi marinade to the pot. Stir and cook for 5–7 minutes.
4. Pour in the stock. Cover and simmer on low for 1 hour until the beef is tender and the sauce is creamy.
5. Add salt and pepper (to taste).

Stir in fresh parsley, serve and enjoy!
