TRADITIONAL SOUTH AFRICAN MELKKOS
Ingredients:
• 2 C First Choice Full Cream Milk
• 1 cinnamon stick
• 1/2 C cake flour
• 1.5 Tbsp First Choice Cold Butter (plus extra for serving)
• 1/4 tsp salt
For the Cinnamon Sugar:
• 2 Tbsp sugar
• 1 tsp ground cinnamon
Directions:
1. Pour the milk and the cinnamon stick into a saucepan. Bring to a gentle boil over medium heat, stirring occasionally to ensure the milk doesn't burn.
2. While the milk heats, combine the flour and salt in a bowl. Rub the cold butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
3. Once the milk boils, reduce the heat to low. Remove the cinnamon stick (or leave it in for a deeper flavour). Slowly sprinkle the flour-butter crumbs into the milk, whisking constantly to avoid large, raw lumps.
4. Continue stirring with a whisk or wooden spoon for about 10 minutes. The mixture should thicken into a soft, creamy custard-like consistency. Ensure the flour is completely cooked through.
5. Ladle into warm bowls.
6. Top with a generous sprinkle of cinnamon sugar and an extra k**b of butter to melt over the top.
