!! JACKFRUIT FISH CAKES aka CRABBY PATTIES !!
Texturally the jackfruit was spot on a little bit of a mind f*ck, to be honest. I think the next time I make these I need to add another sheet or two of Nori (Seaweed) to really impart that ocean, fishy flavor. This was a relatively easy recipe and didn't take up too much time on the prep side either. I tried half the batch deep fried and the other Air fried. I can't lie the deep-fried version was a winner. The crunch factor from the double-dipped Kellogs Corn flakes crumbs spiced with paprika, onion powder, garlic powder, thyme, Cayenne pepper, ground-up toasted fennel, coriander and cumin. The smells that came out of that Air fryer believe me people should be bottled and sold as an air freshener. The air fried version was crunchy too don't get me wrong but I'm a complete sucker for deep-fried food. For the sauce, I made a super quick and simple lemon garlic mayo. Just bash up a garlic clove in a pestle and mortar with half the juice of a lemon add in some mayo and BOOM.
I would recommend the Brand that is sold at Dischem stores if anyone wants to try out Jackfruit. Just tastes better in my opinion. I think its a Thai brand if I'm not mistaken and the brand I used today is from Sri Lanka.
