In my unpublished book that I hope & pray to publish soonest, I go in depth in a number of ingredients that I cook with.

It’s been my duty to find out how these grow in different types of soil, conditions & climates. Not only from other gardeners but from my 1st hand experience.

I get to taste them in their most original state right through to them used as garnish.

It’s made it a challenge not to want to share these recipes…

PART 2 - Lamb Shank Recipe

🥖 Steamed bread balls for the lamb pot. Makes about 10 - 12 small rolls

* 600 g bread flour
* 100 ml warm milk
* 150ml water
* 50 ml olive oil
* 1 tsp salt
* 1 tbsp sugar
* 7 g instant dry yeast
* 1 egg (optional, but makes them richer and softer)

Method

1. Mix warm milk, yeast & sugar Leave for 5 - 10 minutes
2. In a bowl, Add flour, salt & olive oil (and egg if using)
Add milk & yeast mixture & water
Knead for 7 minutes until smooth & soft
It should be slightly tacky but not wet
3. Cover & let rise for 45–60 minutes, until roughly doubled
4. Divide into 10 pieces & shape into into smooth balls
5. Allow to rise again for 15 - 20 minutes

Putting them into your lamb pot

* Make sure the lamb has plenty of sauce/juices simmering underneath
* Place the dough balls on top of the lamb
* Cover the pot tightly with a lid
* Keep the lamb at a gentle simmer, not a hard boil
* Steam/cook the bread for roughly 20 - 30 minutes, depending on their size
