🍲 Hearty Winter Chickpea, Mushroom & Vegetable Soup

A warming, filling soup made almost entirely from the ingredients in your photo. Perfect for cold winter evenings and packed with vegetables, mushrooms, chickpeas, and comforting flavours.

🛒 Ingredients

1 onion, diced

1 punnet sliced mushrooms

½ tray Homemade Soup Mix

1 can chickpeas, drained

2-3 sweet Palermo peppers, diced

500g baby potatoes, halved

2 tbsp Olivia Extra Virgin Olive Oil

1 Knorr Chicken Flavour Stock Pot

1 litre of water

1 tsp garlic & herb seasoning

Salt and black pepper to taste

Pinch of chilli flakes (optional for warmth)

2 tbsp Buttero (optional for extra richness)

👩‍🍳 Method

1. Build the flavour. Heat the olive oil and Buttero in a large pot. Add the onion and cook until soft and fragrant.

2. Add the vegetables. Add the mushrooms, sweet peppers, soup mix vegetables, and potatoes. Cook for 5 minutes, stirring occasionally.

3. Create the broth. Dissolve the chicken stock in 1 litre of hot water and pour it into the pot. Add the garlic & herb seasoning, salt, pepper, and chilli flakes.

4. Simmer. Bring to a gentle boil, then reduce the heat and simmer for 25-30 minutes until the potatoes are tender.

5. Add the chickpeas. Stir in the chickpeas and cook for another 5 minutes.

6. Serve Taste and adjust seasoning. Serve hot with crusty bread or toast.

💡 Optional Upgrade

For an even heartier meal, break the spaghetti into short pieces and add a handful during the last 10 minutes of cooking to create a rustic vegetable and pasta soup.

Serves: 4-6 people
