This Mandela Day, HF spent our 67 minutes where it matters most.

🌱 Planting seedlings at Talitha Children's Home for disabled children to start their new veggie garden. Thank you to Weeds and Seeds and Lynca Meats for joining us and making it possible.

⛹️ Donating a trampoline to Kotulong Community Center so the orphan children have a space to play and just be kids.

🍲 Cooking together in Kotulong's kitchen to make sure everyone had a warm meal.

"Everyone can make a difference." And this year, we did.

Your back to school salads have been planted 😃 It takes 6-8 weeks for most varieties of lettuce to mature, so Harvestfresh Farms plans out each week's plantings to make sure you have fresh lettuce, year round. What we planted this week will be your "back to routine" salads, and with a cup of Romaine lettuce providing up to 36% of your daily vitamin A intake it's an excellent idea to add a salad to your meal planning 😃

With the holidays fast approaching and family meals being planned this recipe is quick, easy to make and absolutely divine drizzled over a variety of salads, stirfry's and wraps for a fresh burst of flavour this festive season! 😀

Ingredients
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1 tablespoon red wine vinegar
1 tablespoon chopped parsley
1 tablespoon chopped mint
1-2 cloves minced/crushed garlic
1 tablespoon dried oregano
Salt & black pepper to taste
1/2 teaspoon dijon mustard (optional) for emulsion
1 teaspoon honey (optional) to balance the acidity of the vinegar and if you prefer it less zesty

Method
Add all ingredients to a shaker and give it a good shake, then drizzle over your favourite green salad, stirfry or wrap 🥗🍲🌯

Notes
•Feel free to add additional salt, pepper, lemon juice and or honey if necessary.
•This dressing can be stored refrigerated in an airtight container for up to five days. •The ingredients may seperate when standing, give it a shake or a stir and it's ready to be used again (the dijon mustard does reduce this)
