With the holidays fast approaching and family meals being planned this recipe is quick, easy to make and absolutely divine drizzled over a variety of salads, stirfry's and wraps for a fresh burst of flavour this festive season! π
Ingredients
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1 tablespoon red wine vinegar
1 tablespoon chopped parsley
1 tablespoon chopped mint
1-2 cloves minced/crushed garlic
1 tablespoon dried oregano
Salt & black pepper to taste
1/2 teaspoon dijon mustard (optional) for emulsion
1 teaspoon honey (optional) to balance the acidity of the vinegar and if you prefer it less zesty
Method
Add all ingredients to a shaker and give it a good shake, then drizzle over your favourite green salad, stirfry or wrap π₯π²π―
Notes
β’Feel free to add additional salt, pepper, lemon juice and or honey if necessary.
β’This dressing can be stored refrigerated in an airtight container for up to five days. β’The ingredients may seperate when standing, give it a shake or a stir and it's ready to be used again (the dijon mustard does reduce this)
