✊🏽Youth Day Kota-Style Loaded Vetkoek✊🏽
Celebrate Youth Day with a proudly South African street-food favourite! These golden vetkoek are loaded kota-style with saucy mince, crispy chips, cheese, atchar and fresh toppings — bold, filling and full of Mzansi flavour.
All ingredients are available at Pick n Pay stores nationwide.

Ingredients:
For the vetkoek:
🛒 4 cups cake flour
🛒 1 packet instant yeast
🛒 2 tbsp sugar
🛒 1 tsp salt
🛒 1½ cups lukewarm water
🛒 2 tbsp cooking oil
🛒 Extra oil, for deep-frying
For the mince:
🛒 500g Pick n Pay beef mince
🛒 1 tbsp cooking oil
🛒 1 medium onion, finely chopped
🛒 2 tsp crushed garlic
🛒 2 tbsp tomato paste
🛒 1 tsp curry powder
🛒 1 tsp paprika
🛒 ½ tsp salt
🛒 ¼ tsp black pepper
🛒 ½ cup water
For loading:
🛒 3 cups frozen chips, cooked until crispy
🛒 1 cup grated cheddar cheese
🛒 ½ cup atchar
🛒 ½ cup tomato sauce
🛒 ¼ cup mayonnaise
🛒 1 cup shredded lettuce
🛒 1 tomato, sliced
🛒 4–6 slices polony, optional
Method:
1. Mix flour, yeast, sugar and salt in a bowl. Add lukewarm water and 2 tbsp oil, then mix into a soft dough.
2. Knead for 8–10 minutes. Cover and leave to rise for 45–60 minutes, or until doubled in size.
3. Divide into 4–6 balls and flatten slightly. Deep-fry in hot oil until golden brown and cooked through. Drain on paper towel.
4. For the mince, heat oil in a pan. Fry onion for 3–4 minutes, then add garlic.
5. Add mince and cook until browned. Stir in tomato paste, curry powder, paprika, salt, pepper and water. Simmer for 8–10 minutes until thick and saucy.
6. Slice each vetkoek open and load with lettuce, tomato, polony, chips, mince, cheese, atchar, tomato sauce and mayonnaise.
