It’s summertime and there is nothing better than a Sunday Braai with family – the smell of boerewors grilling over the open fire always brings a smile to my face.

A “braai” might not be very Indonesian, but walk the streets of Kuta, Denpasar, Sanur or Lombok and you will smell the smoky spicy sate skewers cooked over open fires – delicious!!!

And let’s be honest, nothing beats crispy charred chicken 🍗 the black bits are always the best! And that’s where Huli Huli Chicken comes in.

Huli Huli chicken is actually a Hawaiian classic - sweet, smoky, and glazed to perfection over an open flame 🔥 Traditionally basted with a soy & pineapple sauce and turned again and again (“huli” means turn in Hawaiian), it’s all about sticky char and big flavour 😋

For a fresh spin, I love borrowing a few bold notes from Bali including our Indomex Ketjap Manis and Indomex Sambal Oelek to take this chicken to the next level 🇮🇩

Let’s make Indomex’s Thai Red Curry Dumplings🥟

Ingredients:
12 Soup dumplings (chicken or pork)
1-2 tablespoons IndomexThai Red curry paste
Tablespoon Indomex Peanut Oil
Lime leaves
1 clove garlic crushed
1 teaspoon fresh ginger minced
1 sweet red pepper sliced
250ml Coconut milk
250ml Chicken stock
1 tablespoon Fish sauce
1-2 teaspoons palm sugar
1 tablespoon Lime juice
Salt to taste
Handful fresh basil leaves
Chopped coriander & spring onions to serve

Method:
Sauté curry paste, ginger & garlic for a few minutes until fragrant
Add red peppers, lime leaves, fish sauce, palm sugar, lime juice, chicken stock and coconut cream and simmer
Season to taste with salt
Add dumplings and simmer until cooked through (can also be baked in oven)
Add fresh basil and remove from heat
Top with chopped coriander and spring onion and enjoy

🌶️🍝 Penne Arrabbiata with Indomex Sambal Oelek

A classic tomato pasta with a delicious spicy kick! Here’s the recipe 👇🏼

Ingredients
• Penne or rigatoni
• 1 can tomatoes
• ½ cup tomato passata
• 1–2 tsp Indomex Sambal Oelek
• 2 tsp mixed Italian herbs
• ½ onion, diced
• 1 garlic clove, crushed
• 1 tbsp peanut or olive oil
• 1 chicken stock cube
• ½ cup white wine
• Salt & pepper, to taste
• Grated Parmigiana & fresh basil, to serve

Method

1. Heat the oil in a saucepan and sauté the onion until softened.
2. Add the garlic, canned tomatoes, Sambal Oelek, Italian herbs, white wine, ½ cup stock and passata. Simmer for 20 minutes.
3. Meanwhile, cook your pasta until al dente.
4. Blend the sauce until smooth and season to taste. Add a splash of pasta water if the sauce is too thick for a silky finish.
5. Toss the cooked pasta through the sauce.
6. Serve with fresh basil, cracked black pepper and plenty of grated Parmigiana. 🌿🧀

Fire up the braai, gather your friends and family and get ready to shout Go Bokke! 💚💛

Our ultimate Bokke braai board is packed with flavour:

Quick Smashed Asian Cucumber Salad:

INDOMEX LAKSA RECIPE:
(serves 3-4)

INGREDIENTS:
125ml Indomex Laksa Paste Spice Jar
3 table spoons Olive Oil or Peanut Oil
200-300 grams Protein (Chicken fillet, de-shelled Prawns or Firm White Fish Fillets)
2 tablespoons Fish Sauce
2-4 dried lime leaves
Coconut Powder (to make 1cup coconut milk)
4-6 cups Chicken Stock
250 grams Noodles
½ cup bean sprouts
½ cup chopped Coriander (save some for serving)

TO SERVE:
Lime Wedges
Chopped Coriander or mint

INSTRUCTIONS:
Prepare Noodles according to package instruction
Heat oil in a heavy bottom pot
Add Laksa Paste and sauté stirring constantly until it becomes fragrant (2-3 minutes)
Add Chicken stock, lime leaves and fish sauce and bring to a simmer
Add protein and simmer until just cooked (don’t overcook your fish or prawns)
Add the coconut milk and simmer until heated through (don’t boil)
Add lime juice and extra fish sauce to taste
Divide cooked noodles into bowls and ladle flavourful soup over noodles
Top with bean sprouts, chopped coriander and serve with chilli and lime wedges
Traditionally served with a dash of chilli sauce or finely sliced red chilli’s for added heat
