Date and cashew bars are so good, and gluten and dairy free as a bonus.
I am still on my diet because I am not sure how to proceed with the reintroduction šŸ˜‚
I tried cheese but my stomach decided to cramp really bad and it also bloated, so I stopped that quickly.
I haven’t added anything else at the moment because I want to wait and settle my stomach again before I introduce a new one.
So this was a great snack that is also healthy.

5 pitted dates, chopped
1/4 c peanut butter (buttanut brand)
1/4 c honey
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
30g cashews, chopped
1/2 c gluten free oats
Chop the dates and set aside
Place the oats into a glass mixing bowl and set aside.
Place honey, peanut butter, cinnamon, ginger and nutmeg into a saucepan on low to medium heat.
Stir until smooth and well mixed
Pour into the bowl with the oats and add the dates and chopped cashews.
Mix well.
Place baking paper on a baking tray with the paper going over the edge.
Place mix onto baking tray and using the back of a spoon, press into tray evenly.
Put into refrigerator for 2 hours, then cut into bars and enjoy šŸ˜‰

Spiced veg casserole (dairy free)

This is an easy dinner to put together with whatever vegetables you have on hand that are either left over or not. I bought a pack of cubed butternut, pumpkin and sweet potato and used half in this dish and the other half in the lamb stew for the meat eaters of the family.
I had some tenderstem broccoli left over from last night which I added as well.
Simple and easy after a long week, this is suitable for dairy free and non meat eaters. Serve with some rice.
Recipe below ā¬‡ļø

1 T coconut oil
1 red onion, chopped
1 tsp crushed garlic
3/4 tsp Thai red curry paste
1 tsp mustard powder
1 tsp ground cumin
1 tsp ground ginger
1 tsp tumeric
100g cut mini tomatoes
Some tenderstem broccoli
Cubed butternut
Cubed pumpkin
Cubed sweet potato
130g tomato puree
1 heaped tsp chicken flavoured stock powder
180ml hot water
1 small can coconut cream

SautƩ onions in coconut oil.
Add the garlic and sautƩ few minutes
Add the vegetables and the spices.
Add a little water to take the dryness away from the pot.
Add the tomatoes, broccoli and orange pepper, as well as the tomato puree and chicken powder.
Add the water and allow to simmer u til all are soft.
Add the coconut cream and serve with rice.
Season with salt and pepper to taste.

Protein flapjacks. It has been quite an experience having to work out what to make with this non dairy non gluten diet for 6 weeks to reset my body. This morning I made these protein pancakes and they actually turned out really well. Will definitely make again, and it was 16g of protein, so a good start for my protein needed for the day.

Recipe as below:

10g protein powder
3 T almond flour
Pinch salt
1/2 tsp baking powder made from baobab tree
1 large egg
3/4 tsp vanilla extract
3/4 tsp coconut sugar
1/2 c almond milk

Add dry ingredients into a bowl and mix.
In separate bowl, add the egg, vanilla, sugar and milk and whisk well.
Add dry ingredients to wet and whisk until smooth
Allow to sit 5 minutes.
Spray olive oil into pan and wipe excess with kitchen towel.
Drop tablespoons amounts into pan and flip when bubbles appear.
I served mine with a little drizzle of honey and blackberries

After the comments and ideas I got sent today from my story post, I managed to make a healthy non dairy and non gluten lunch.
This included roasted sweet potato, leftover chicken from the night before and a dipping sauce.
Still not sure how I feel about coconut yoghurt šŸ˜‚
Grated and squeezed cucumber
2 dollops coconut yoghurt
1/2 tsp each of garlic and onion powder
Salt and pepper to taste
1/2 tsp sweet paprika

Tuna mayonnaise made extra tasty using the easy to use sachet from Woolworths. I am recovering from a small knee op and making an easy meal is what I need right now. So hopefully this will inspire you too.

For the tuna, I used the tomato and herb one, which mixed together with some extra ingredients, elevates those tastebuds.
With some lettuce for crunch, and pear for a bit of sweetness against the salty, it is such a great light lunch.

Details as below:
Empty a sachet of Woolworths tuna tomato and herb into a bowl
Add a teaspoon of Dijon mustard
Some salt and pepper
Layer your bread slices with lettuce
Tuna mix
Fresh parsley
Sliced pear

Cape Town, we are weathering the heatwave but it could be made easier with these healthy ice lollies. Made with blueberries, strawberries and yoghurt, blended well and poured into moulds.

I found this mould set at the kitchen shop at Steenberg Centre. What a great place to source all your kitchen needs.

I so look forward to my delivery from .africa.
I love their products for cleansing my face and body. Their cleansing lotion makes you feel really clean and it has some of their African black soap as one of the ingredients.

African black soap is pure gold. I use it in the shower on my face and also body. You know that feeling when you wash your hair and it’s squeaky clean? It’s the same with the African black soap, makes your skin really clear of all impurities and ready for some of their moisturizing face cream.

What a secret gardenšŸ˜‰
From when you walk through the doors from the clothing area of to the eating area, it’s like stepping through into another place. It’s like stepping into Narnia from a cupboard šŸ˜‚. A quiet and peaceful place with good healthy food. With the kitchen run by Chef Mako, the food was tasty and I literally cleaned my plate.
I had toasted cheese and tomato with basil pesto and extra roasted mushrooms; the guys had the smashed burgers; moist and flavour some. Both came with a side of a salad instead of fries, which was a welcome change.
