Winter is an important time for blending.

Blending can mean combining different cultivars, as we do with our S.C.G. (Shiraz / Cinsaut / Grenache), where each variety contributes something different - perhaps aroma, freshness, structure, spice or length. But blending also happens within a single cultivar.

The w**emaker tastes through the individual barrels and selects those that work best together. The goal is not simply to choose the biggest or boldest w**es, but to create balance.

Blending begins with small bench trials in tasting glasses. Different proportions are measured, tasted and compared before the final recipe is scaled up to an entire tank or selection of barrels.
