Crispy-Bottom Dumplings

1. Heat a pan over medium-high heat and add 1tsp butter or vegetable oil . Arrange the dumplings in the pan and cook until the bottoms begin to turn golden.
2. Mix 1 teaspoon cornstarch with about ⅔ cup water, stirring until completely dissolved.Pour the cornstarch-water mixture into the pan around the dumplings. Immediately cover with a lid and cook for about 5 minutes, or until most of the liquid has evaporated.
3. Remove the lid and continue cooking until the remaining moisture has evaporated and the cornstarch mixture has formed a golden, crispy crust underneath and around the dumplings.
4. Cover with lid and cook for 30 seconds. Remove the lid and turn off the heat. Use a plate that is roughly the same size as the pan, put it over the dumplings and flip it over. Tap the bottom of the pan several times to loosen the dumplings.

Optional step drizzle with a little sesame oil, before flipping it over.
