What are Sea Scallops? ❓

Sea scallops are a large, deep-water mollusc. They have a very distinctive sweet and firm flavour. Scallops are very different from clams like most people think, but other alternatives that can be used in cooking are shrimp, lobster, monkfish or crab. These all provide more or less the same flavour and texture.

Cooking scallops is relatively easy since you just fry them in a pan until golden brown on both sides, but the tricky part is to ensure that they are completely dry. Wet scallops tend to grill and become rubbery.

South African Apricot Jam Glaze! 🍯 🇿🇦

Snoek is one of the most versatile fish to braai. You can prepare any type of sauce and all will pair so well with this dish!

Here is our take: The South African way is the best way. 😎

1. Melt the ingredients in a pot: Butter, apricot jam, garlic, and lemon juice over a low heat until well combined.
(The Afrikaans tannies will tell you to even add about a tablespoon of mayonaisse)

2. Prepare the fish: Pat the snoek dry with kitchen paper and brush the skin side lightly with melted butter to prevent it from sticking to the grid.

3. Glaze the fish: Brush the flesh side generously with the warm apricot glaze, ensuring it gets into every cut and cavity.

4. Baste the cook: Place the snoek skin-side down in a hinged braai grid, baste the flesh side every few minutes with the glaze and cook for 5-8 minutes per side until the flesh is white.

This sauce has come generations and generations! Trust us - it's still the best to combine with this fish. 💙
