🍗Today’s Match-Day Recipe: Chutney Mayo Chicken & Rice Bake
Wednesday night calls for an easy, comforting South Africa match-day supper— and this Chutney Mayo Chicken & Rice Bake is the perfect one-pot dinner before kick-off. ⚽🏉
With just 10 minutes of prep, your oven does the rest while you get ready for South Africa vs Korea Republic. Add a green-and-gold garnish like parsley, spring onion, chives or a fresh green salad for that proud local match-day touch.
All the ingredients are available at Pick n Pay stores, making it easy to shop, bake and serve hot out of the oven.
Serves: 4
Time: 50–60 minutes
Ingredients:
• 1 packet / 8 PnP fresh chicken thighs and drumsticks
• 2 cups / 500ml PnP long grain basmati rice
• 4 cups / 1L boiling water
• 2 tsp / 10ml salt
• 1½ cups / 375ml mayonnaise
• 1 bottle / 470ml PnP mild chutney
Method:
1. Preheat the oven to 200°C.
2. Place the rice, boiling water and salt into a deep 30cm x 25cm ovenproof dish.
3. Score the chicken pieces with a sharp knife, if preferred, and arrange them evenly on top of the rice.
4. Mix the mayonnaise and chutney together, then pour over the chicken and spread evenly.
5. Cover with foil and bake for 30 minutes.
6. Remove the foil and bake for another 20 minutes, or until the rice is cooked and the chicken is golden and cooked through.
7. Serve hot out of the oven.
Cook’s note:
Add paprika or chilli flakes to the mayo-chutney mixture for extra kick. Garnish with fresh parsley or chives for a green-and-gold finish.
