🍗 Wiesnhondl – Crispy Oktoberfest Chicken

Ingredients

1 whole chicken (about 1.5–2 kg)

2 tbsp butter, melted

1 tbsp vegetable oil

1 tsp paprika

1 tsp garlic powder

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

1 lemon, halved

2–3 garlic cloves, crushed

Fresh parsley, to serve

Method

1. Prepare the chicken: Pat the chicken completely dry with paper towel. This helps the skin become extra crispy.

2. Season: Mix the melted butter, oil, paprika, garlic powder, thyme, salt and pepper. Rub generously all over the chicken and under the skin where possible.

3. Add flavour: Place the lemon halves and crushed garlic inside the cavity.

4. Roast: Place breast-side up in a roasting dish and roast at 200°C for about 1 hour 15 minutes–1 hour 30 minutes, depending on size.

5. Crisp it up: For the final 5–10 minutes, increase the oven to 220°C for golden, crispy skin.

6. Rest: Let the chicken rest for 10–15 minutes before carving.

7. Serve: Garnish with fresh parsley and serve with crispy potatoes, sauerkraut or a fresh cucumber salad.

🌭 Oktoberfest-style twist: Serve it with mustard, pretzels and a cold non-alcoholic b**r for a proper Wiesn-inspired meal!
