Receiving a visit last Wednesday from West Coast Chef School, we showed them the process required to raise the abalone and let them observe how they are fed kelp to achieve a natural flavor. Then selecting some of the best abalone for them to take back to the school's kitchen to prepare. Thus offering an intense "sea-to-table" experience that balanced a tender bite with a savory, oceanic richness. Have a look at some of the highlights!
