Africa's climate isn't just a backdrop, it's a formulation challenge.

With ambient temperatures regularly exceeding 30°C and humidity levels that can spike above 80%, the rules of ingredient science look very different here than in a European lab.

Here's what that means in practice:

- Heat accelerates rancidity in fats and oils, shortening shelf life if the right antioxidants and emulsifiers aren't selected.
- High humidity causes hygroscopic powders to clump and cake when the incorrect free flow and anti-caking agents are used.
- Temperature fluctuations during transport stress emulsions and cause phase separation.

Ever wondered what keeps your favourite sauce from separating? Or why one yoghurt stays smooth for weeks while another turns watery in days?

The answer is stabilisers — and they do a lot more than most people realise.

Stabilisers work at a molecular level to:
- Prevent oil and water from separating (emulsion stability)
- Control viscosity, giving products the right pour, spread, or mouthfeel
- Minimise microbial growth by reducing free water activity
- Maintain texture and appearance over shelf life

From hydrocolloids like carrageenan and pectin, to emulsifiers like lecithin and mono- & diglycerides — the right stabiliser system can mean the difference between a product that reaches the consumer in perfect condition and one that doesn't survive the supply chain.
