Sole has a reputation for being fancy. It isn't. It's the easiest fish on the ice to get right.

Pat the fillets dry, season with salt and pepper, and lay them in a hot pan with a splash of oil. Two to three minutes a side and it's done. The flesh is delicate, so a gentle hand and one confident flip is all it needs.

While it sears, throw together the sauce that turns it into a restaurant plate: lime juice, a little garlic, a chopped chilli and a handful of fresh herbs, loosened with a spoon of pan butter. Bright, sharp, a bit of heat. Spoon it straight over the fish.

That's it. Ten minutes, one pan, and the best fish on the counter finally getting the plate it deserves.

Shad season is calling!
At just R55.95/kg, Shad is the people's fish — bold, oily, and made for the coals. A bit of lemon, a bit of salt, and you've got a braai that tastes like the coastline.
But the slab's stacked this week. Also fresh:
Cape Salmon — R104.95/kg
Yellowtail — R79.90/kg
Carpenter — R69.95/kg (Large) | R59.95/kg (Med)
Get down to Balobi Fish Market before it's gone.
