Sole has a reputation for being fancy. It isn't. It's the easiest fish on the ice to get right.

Pat the fillets dry, season with salt and pepper, and lay them in a hot pan with a splash of oil. Two to three minutes a side and it's done. The flesh is delicate, so a gentle hand and one confident flip is all it needs.

While it sears, throw together the sauce that turns it into a restaurant plate: lime juice, a little garlic, a chopped chilli and a handful of fresh herbs, loosened with a spoon of pan butter. Bright, sharp, a bit of heat. Spoon it straight over the fish.

That's it. Ten minutes, one pan, and the best fish on the counter finally getting the plate it deserves.
