Mughlai Chicken Changezi

A majestic, slow cooked Chicken Curry with a velvety, deeply aromatic base of Garlic, Ginger, browned Onions, Cashews, Tomato and Yoghurt. Chicken is marinated in the Yoghurt and Spices overnight. Turmeric, Kashmiri Red Chillies, Cumin, Coriander, Kasuri Methi, the wonderful Chaat Masala et al. This Mughlai dish is age old and very popular in North Indian restaurants. It balances the rich and creamy elements with a bold, spicy kick.

Curry from the Indian subcontinent where a sophisticated and unique cuisine developed. Made with subtly spiced Kofta (meatballs) using my Sunday Spice mix and caramelised Onions. A celebratory dish. Dry Roasted Masala, Coriander, Fennel, Cumin, Tomato, Fenugreek, Cinnamon, Cardamom, Saffron et al. Yoghurt and Cashew Nuts provide the quintessential creaminess and decadence. Medium heat.
