Celebrating four years since the publication of The Harvest Table cookbook. What a privilege to be featured in an internationally award-winning title. 🍷 Not just a cookbook, but a culinary experience through South Africa, France and Sicily.
A sneak from the pages of the Harvest Table...
Anyone who has visited the Cape in spring or summer will have experienced the famous southeaster wind blowing through Cape Town and the surrounding towns, beaches and rural areas. For the vineyards of Le Chant, this means almost constant exposure to a gentle maritime breeze during the critical vineyard phases of bud-break, flowering and berry-set. And when the grapes begin to ripen and gain sugars, the mild airflow ensures ripening is slow and easy, resulting in complete phenolic ripeness in the fruit.
Petri Venter, Le Chant’s winemaker, loves this part of the world. ‘I grew up here, and while studying viticulture and oenology at Stellenbosch University, much of the attention was focused on the better-known wards of this region, such as
Simonsberg, Helderberg and Bottelary,’ he says. ‘But since getting to grips with the soils and climate of Polkadraai, as well as the old and established culture of viticulture here, I am realising what a magical place this is: one of the next big addresses in the wine world.’
