Carolus Magnus Rex Chardonnay '23.. A sumptuous, full-bodied wine with a velvety, creamy palate, revealing tropical nuances and delicious citrus-lime accents. Elegantly paired with calamari and chorizo chilli pasta, the wine's richness beautifully complements the dish's savoury depth and subtle spice, resulting in a fabulously satisfying dining experience.

Autumn in the Cape is spectacular.. Fierce summer winds drop, leaving crisp, golden days and calm, balmy afternoons. The winelands transform into vibrant shades of amber and rust, offering the year's best weather for hiking, and of course, wine tasting!

Did you know that in a modern winery it takes up to 10 liters of water to make 1 liter of wine? Hygiene is everything when it comes to producing the perfect bottle..

Viognier, one of the wine world’s most demanding grape varieties, requiring precision between ripeness, acidity, and alcohol. Naturally low in acidity and highly sensitive to climate and harvest timing, it can quickly become overly rich or flat. Yet when grown and crafted carefully, Viognier produces deeply aromatic, textural wines of remarkable elegance, perfume, and complexity.

Since 2003, my focus has revolved around Syrah and Viognier — a pursuit driven by the desire to harmonise varietal and natural environment. Syrah expresses itself magnificently within our Cape Atlantic climate and 400-million-year-old decomposed granite soils, while Viognier remains a rare and demanding varietal, requiring patience and tenacity to balance acidity with ripeness. This pursuit, whilst deeply rewarding, remains an ongoing work in time — an evolving dialogue between vine, soil, and season, where nothing is ever truly finished, only continuously refined.
