As it turns out, cheese is customarily high in fat, which coats the mouth and blocks taste receptors to beverages. The acidity and sweetness of a well-paired wine cut through this creamy barrier to unlock a fuller flavour on the palate and create an excellent mouthfeel.

For an easy Italian-inspired salad, combine some ripe vine tomatoes with olives, fresh basil and mozzarella cheese. Add in some torn ciabatta bread and drizzle with 2 tsp. each of extra virgin olive oil and red wine vinegar.
