π Creamy Chicken Pasta with Crispy Chicken-Skin Chilli Oil
Creamy, comforting and packed with flavour, this easy chicken pasta is finished with a crispy chicken-skin chilli oil for a deliciously bold twist. Perfect for a weeknight dinner with a little extra flair.

Cooking time: 35β40 minutes
Ingredients:
β’ Glug of olive oil
β’ 1 onion, finely chopped
β’ 2 cloves garlic, finely chopped
β’ 4 chicken thighs, skin removed and reserved for the chilli oil
β’ 1 cup milk
β’ 2 tsp cornflour, mixed with a little cold water to make a paste
β’ Salt and milled pepper, to taste
β’ Juice and grated peel of Β½ lemon
β’ 1 packet penne pasta
β’ Fresh thyme, for garnish
For the crispy chicken-skin chilli oil:
β’ 2 Tbsp vegetable oil
β’ Reserved chicken skin, chopped into small pieces
β’ 1 tsp chilli flakes
β’ 2 cloves garlic, chopped
Method:
1. Heat a glug of olive oil in a pan over medium heat. SautΓ© the onion for 5 minutes, or until soft.
2. Add the finely chopped garlic and cook for another minute.
3. Add the chicken thighs and pour in just enough water to cover the meat. Simmer for 25β30 minutes, or until the chicken is tender and cooked through.
4. Remove the chicken from the pan and shred the meat.
5. Increase the heat and reduce the cooking liquid until about Β½ cup remains.
6. Add the milk and cornflour paste, then cook for 2β3 minutes, or until slightly thickened.
7. Return the shredded chicken to the sauce, season with salt and milled pepper, then stir through the lemon juice and grated peel. Keep warm.
8. To make the crispy chicken-skin chilli oil, heat the vegetable oil in a small saucepan. Fry the chopped chicken skin until crispy.
9. Add the chilli flakes and chopped garlic, then fry for another minute until fragrant.
10. Cook the penne according to the packet instructions, then drain.
11. Toss the pasta through the creamy chicken sauce.
12. Serve drizzled with crispy chicken-skin chilli oil and garnish with fresh thyme.
