We don’t always announce new product offerings with trumpets and trombones. Sometimes we sneak them on to the website shop, sit back and wait. That you order them lets us know the word has quietly spread. Globally, there is a rumbling. Seed oils might be banned from use in food production. Sounds impossible, given the scale of the industry, controlled by colossal corporate giants and that seed oils are in just about EVERYTHING sold in a can, bottle, jar, box or packet. The world has come full circle. In the 50’s and 60’s animal fats were exiled and seed oils were hailed as the healthier fat to use. Now, science is beginning to report the apocalyptic health results of that choice on the world’s population. We are avid proponents of beef tallow and pork lard. There is a rider to that, the animals from which the tallow and lard are obtained should not have been raised unhealthily in large scale feedlots using antibiotics, steroids, appetite stimulants, growth hormones, etc. Globally, there is a shortage of free range, ethically farmed meat, so there is only a small amount of healthily produced tallow and lard such as ours available.. So, back to our website shop, we quietly added our seed oil free Tallow Fried Potato Crisps and Bacon Fat Fried Potato Crisps to the offering there. Wow, instant hit. Thank you! Did you hear the one about the female carnivore? No, neither had I heard that one, but this week I met a real live female carnivore, a health professional to boot. Several of our male customers profess to follow a carnivore diet, but meeting a female carnivore diet proponent was a first for me. It’s no longer considered to be a mere fad and there is much published scientific data in support of such a lifestyle choice, as there is for veganism, keto, intermittent fasting, etc. We like to keep an open mind as there is usually big money and a specific agenda behind most funded research. That said, a diet of ethically grown, nutrient dense real food, eaten in moderation, is probably the best option for most of us.

We are often asked why we make so little bacon, particularly by those who tell us they cannot eat any other. Not every pig carcass is suitable for the making of bacon, particularly ours. Our pigs are small, so there is a higher bone to meat ratio than on large commercial factory farmed pigs and as they spend time roaming the forest and fields around the house and farmyard, they don’t carry much fat. Further, the meat is wood smoked and not liquid smoked and that process takes time, the most expensive and finite commodity known to all of us. Most bacon manufactured at scale is liquid smoked using chemicals and is sold as smoked bacon because the word may be used even though no actual fire smoking took place. We think ours is better, but don’t take our word for it, buy some, cook it gently and enjoy!
