Here is some interesting buttercream recipes.

Ingredients
🍋🎂 Lemon Buttercream
1 cup unsalted butter, room temperature
4 cups powdered sugar, sifted
¼ teaspoon fine salt
2 teaspoons fresh lemon zest
2 tablespoons fresh lemon juice
2 tablespoons heavy cream
1 to 2 drops yellow gel food coloring, optional

🧁🍒 Blueberry Cream Cheese Frosting
1 cup fresh blueberries
2 tablespoons granulated sugar
1 cup salted butter, softened
16 ounces cream cheese, softened
5 cups powdered sugar
1 teaspoon vanilla extract

🧁🍓 Strawberry Cream Cheese Frosting
16 ounces cream cheese, softened to room temperature
1 cup salted butter, softened to room temperature
1 teaspoon vanilla extract
6 cups confectioner's powdered sugar
2½ cups freeze-dried strawberries, pulsated to a powder

🍰🎂 Cool Whip Frosting
¾ cup cold whole milk
4 tablespoons powdered sugar
3.4 ounces instant pudding (whatever flavor frosting you need)
8 ounces whipped topping, thawed

Funfetti Vanilla Cake

Ingredients
• All-purpose flour – 3 cups (375g)
• Granulated sugar – 2 cups (400g)
• Baking powder – 2½ teaspoons
• Salt – ½ teaspoon
• Unsalted butter (soft) – 1 cup (225g)
• Eggs – 4 large
• Vanilla extract – 2 teaspoons
• Whole milk – 1 cup (240ml)
• Rainbow sprinkles – ½ cup (85g)

For frosting (optional, buttercream)
• Unsalted butter – 1 cup (225g)
• Powdered sugar – 3 cups (360g)
• Vanilla extract – 1½ teaspoons
• Milk or cream – 3–4 tablespoons (45–60ml)
• Pinch of salt

Instructions

Preheat the oven to 170°C (340°F). Grease and line three 8-inch cake pans.

Cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each, then stir in vanilla extract.

Sift together the flour, baking powder, and salt. Fold gently into the creamed mixture, alternating with milk, until smooth.

Gently fold in the rainbow sprinkles. Avoid overmixing to prevent them from bleeding color.

Divide the batter evenly among the three prepared pans. Smooth the tops.

Bake for 25–30 minutes, or until a skewer inserted comes out clean. Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For frosting, beat butter until creamy, add powdered sugar gradually, then milk, vanilla, and a pinch of salt. Beat until smooth and fluffy.

Stack the cooled cakes with frosting between layers. Frost the outside as desired and add extra sprinkles on top for decoration.
