Ginger and garlic ground to a paste. Included red and green chillies, curry leaves as well.

Bit of labour required. I bought the ginger and garlic in small batches. So it wasn't a daunting task.
The garlic bulb is broken into cloves and frozen. Remove from freezer and cover completely with hot water. Easy to peel.
Ginger peel or scrape. Cut into small pieces. Freeze until ready to grind.
Wash the chillies and curry leaves. Add in as u grind.

The end result is absolutely worth it.
I've tried shop bought and i wasn't impressed. No aroma. Very weak and watery.

When u make your own, you don't need to use a lot in your dishes.

Keep enough to use and freeze the rest. It will last you a long time. Defrost as required.

Chakalaka bread

2 cups flour
3 tsp baking powder
1 tsp salt
410g chakalaka
4 eggs, lightly beaten
1/2 cup grated cheese

Spray loaf pan with non stick spray.
Oven to 180Β°C.
Sift flour, salt n baking powder.
Stir in chakalaka.
Add in the eggs
Mix. Spoon into prepared loaf pan.
Sprinkle grated cheese over.
Bake for 35 minutes until skewer comes out clean

Enjoy it sliced n buttered.
Best with braai. Can also have with roasts.

Mealie rice kitchri, swiss chard herbs, paneer in tomato chutney. Lunch is served.

How to make mealie rice kitchri.

Soak 1 cup mealie rice in cold water for at least half an hour

approx 3~4 Tbs peadhal
Wash n put peadhal in pot to boil. Add salt n turmeric. About 3\4 pot full water
Boil for 10~15 minutes

Wash mealie rice and add to pot.
Cook on low.
Keep pot uncovered or slightly covered
As it cooks, it begins to bubble n kind of splatter out of pot. So b careful. Stir regularly to male sure not sticking. Use a long handle spoon.
Cook for about half hour or until soft.

Heat ghee in frying pan. Make vagaar of jeera, dry chillies n onion. (Like u would for dhal)
Add to pot.
Enjoy with accompaniments.

My fav is with the masala from lime pickle. Yes n some lime pickle too. ;)

Fish curry

Marinate fish in paste made of salt, garlic paste,curry powder,lemon juice n little oil.

Liquidise half onion, tomato,chillies n mint.

Other half onion, diced
Aamli soaked in water
1/2 tsp turmeric
1/2 tsp chilli powder
1/2 tsp dhania/jeera powder
1/2 tsp soomph powder
Salt
1/2tsp sugar

Heat oil. Braise with jeera ,mustard n methi seeds.
Add in diced onions.
When slightly brown, add in salt n spices. Add in liquidised tomato, curry leaves, slit green chillies n sugar. Mix n allow to cook for a short while.
Add the strained aamli juice n allow the gravy to cook n thicken.
When gravy has thickened, layer the fish in. Cook for 5 to 10 minutes then gently turn over.
Continue cooking for another 5 to 10 minutes.
Garnish with dhania n serve.
Delicious!

Sour dhal

Clean the sour herbs. I used the clover leaf herb and I used the top leaf n little of the tender stem. Wash well.

Braise onion n garlic. Add salt, 1/2 tsp turmeric, 1/2 tsp chilli powder , 1/4 tsp dhania/jeera powder. Put the washed herbs in and leave to cook. Add in 1 grated tomato to it. Allow to cook until reduced and looks pulpy but not dry.
Add this to the already cooked dhal.
Enjoy.

Dhal

Wash1 cup peadhal n put in water to boil.
Add 1tsp turmeric
1tsp chilli powder
Salt
During cooking add in half diced onion n 1 tomato diced or grated.
The pea Dhal must be completely cooked n dissolved in the water. Make dhal as thick or little weaker, according to your preference. If while cooking water has gone less, u can add more water n bring back up to boil. Be careful of it overboiling. Preferable to leave lid off.
Make vagaar in ghee/ oil with jeera seeds, 1 dry red chilli, 1 or 2 sliced garlic and half finely sliced onion.
Add this to the dhal.

Dhal is ready to be eaten.

So i saw a post about homemade butter made with fresh cream. I was eager to try it out.

I bought a 1 litre fresh cream. I used my hand mixer. ( was lazy to go look for attachments to whip cream for my food processor in the box in the garage). Took about 15 minutes n bob's your uncle. I had made butter. (Ps - i did not add any salt, however u can do so after its reached the whipped stage.) 1 litre made about 500g butter.

Just whip
Start to thicken
Then becomes like whipped cream
Then starts to separate into butter n liquid at the bottom.
Strain thru colander.
Refrigerate n use.
Lasts about a wk apparently.

I'm so thrilled. Apparently it will be good in the fridge for about a week.
Tastes very nice n creamy. Not oily taste.
