Pecan Pie Cobbler ๐
Ingredients:
For the Cobbler:
1 cup all-purpose flour
1 cup granulated sugar
1/2 tsp baking powder
1/4 tsp salt
1 cup milk
1/2 cup unsalted butter, melted
For the Pecan Pie Filling:
1 cup light brown sugar, packed
1/2 cup light corn syrup
1/2 cup unsalted butter, melted
3 large eggs
1 tsp vanilla extract
1/4 tsp salt
1 cup pecans, roughly chopped
Instructions:
Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC). Grease a 9x13-inch baking dish.
Prepare the Cobbler Batter:
In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Stir in the milk and melted butter until well combined. The batter will be somewhat thick.
Pour the Batter: Pour the cobbler batter into the prepared baking dish, spreading it evenly.
Make the Pecan Pie Filling:
In another bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.
Stir in the chopped pecans.
Assemble: Pour the pecan pie filling evenly over the cobbler batter in the baking dish. Do not stir; the filling will sink and swirl into the batter as it bakes.
Bake: Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the cobbler is set. A toothpick inserted into the center should come out clean.
Cool and Serve: Let the cobbler cool for at least 20 minutes before serving. Itโs delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream!"
