We love to see what's cooking in your kitchen! Here are some of the yummy goodies our customers have been making lately with our Pasture Raised Chicken -

1. Schmaltz (rendered chicken fat) - Made from chicken skins, did you know you can buy them from us?
2. Wholesome Ramen - Made with the chicken broth rendered from the collagen packs (Also great for making bone broth and the savoury base of any stew or curry)
3. Roasted Deboned Chicken - Our deboned chicken is such a versatile option and it is so good on the braai!

💛🌱🤩Thankful Tuesday 🤩🌱💛

This week we’d like to mention a few things we are *thankful* for!

1. We are really grateful and humbled to see our name on the wall in Rosémead Bakery in Yzerfontein as one of their official suppliers. 🤩 It is such an honour to be serving our community - a big milestone for us!
2. Before & After photos of our Pasture. Our veld has improved dramatically in the last season as a result of the regenerative practises we have been applying. So many grass varieties and fauna are returning to area after being dormant in our sandy soils.
3. Last week we took in our biggest batch of chicks yet - 800. 🐥🐥🐥 This is only possible because of the amazing support of our community, restaurants and resellers. Your support gives us a chance to supply more families with quality pasture raised chicken.
These are only a few of the many blessings we are thankful for in this past year - thank you for being part of our journey!

“How is Pasture-Raised different from Free Range? Aren't they the same?”

This is probably the most frequently asked question that we get when meeting new people who want to learn more about our farm - and we're so glad you ask these important questions! There are a few key differences that are important for you to know, and today I’d like to share the first one: S P A C E.

On the same area we use to grow 400 pasture-raised chickens in movable coups, the modern "free-range" farm model grows up to 21 000 chickens in a static building. Let that sink in for a moment.

The Pasture Raised system is dynamic, our flock is moved to new grazing daily. A pasture-raised bird lives, moves, scratches, and dust bathes on clean veld daily (they can basically just be a chicken 🤣🐔). Each morning their feeding/roaming area is fresh and clean from any droppings of the previous day.

Free Range is a static system - the birds STAY in same area their whole life. A bird shares the 1x1 meter area around them with up to 15 other birds (or 28 for conventional broiler farms). Overcrowding leads to dirty, unsanitary living conditions that affect their immune systems, often leading to antibiotic intervention.

Deboned Whole Chicken

Try this on the braai and you'll wonder why you only discovered it now. We love to make this for our family on the hot coals and serve it with fresh sourdough bread (thanks Rosemead Bakery!) and butter.

If you're more adventurous you can stuff it, roll it up and bake in the oven. Some filling ideas:
- Figs, goats cheese, & pistachios
- Spinach, mushroom & prosciutto
- Mince, sun-dried tomatoes, basil & mozzarella

Our featured item of the week:
Chicken thighs are a flavourful, juicy, and forgiving cut of dark meat that can be baked, pan-seared, or grilled.

Flavour Ideas:
* Honey Garlic: Toss with soy sauce, honey, minced garlic, and ginger.
* Classic Herb & Spice: Season with smoked paprika, garlic powder, onion powder, salt, and black pepper.
* Citrus Marinated: Marinate in lime juice, orange juice, cumin, and oregano.
