Greek Chicken Souvlaki Grazing Board with Whipped Feta Dip
Ingredients
2 lbs boneless, skinless chicken thighs or breasts, cut into chunks
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Wooden skewers (soaked if using bamboo)
Pita bread, warmed and sliced
Cherry tomatoes
Cucumber slices
Kalamata olives
Red onion slices
Lemon wedges
Fresh parsley for garnish
Whipped Feta Dip
1 cup feta cheese, crumbled
1/2 cup Greek yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
1 clove garlic
1 tablespoon fresh dill or parsley
Black pepper to taste
Directions
In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 1 hour.
Thread chicken onto skewers.
Grill or pan-sear over medium-high heat for 10–12 minutes, turning until fully cooked and slightly charred.
To make whipped feta, blend feta, Greek yogurt, olive oil, lemon juice, garlic, dill, and black pepper until smooth and creamy.
Arrange grilled chicken skewers on a large board.
Add pita, cherry tomatoes, cucumber, olives, red onion, and lemon wedges around the board.
Serve with whipped feta dip in the center and garnish with fresh parsley.
