🌿 FROM THE ROOTS, WITH LOVE.

At Back to Black Roots Kitchen, we believe that some of the most sustainable food practices are the ones our communities have known for generations.

Dried greens are one of my favourite ways to preserve the harvest. They allow us to enjoy our leafy vegetables beyond their growing season, reduce food waste and make the most of what we already have.

Today, we’re serving up these beautifully preserved greens with toasted pita wedges — simple, nourishing and full of character. 🌱

Food preservation is more than a technique. It’s knowledge passed down, resourcefulness in our kitchens and a connection to the land that feeds us.

Now tell me: what greens do you dry or preserve in your culture, and what do you call them?

THE AFRICAN VEGAN ON A BUDGET | BACK TO BLACK ROOTS KITCHEN

At Back to Black Roots Kitchen, collard greens are more than an affordable leafy green—they’re a delicious celebration of sustainability, versatility, and food preservation. 🌱💚

With a few simple ingredients and a little creativity, fresh collard greens can become a nourishing, budget-friendly meal. You can also dry the leaves for later use, helping reduce food waste, stretch your grocery budget, and preserve traditional foodways.

Eating well doesn’t have to be expensive. Food preservation is sustainability in action—and a smart way to make every ingredient count! 🌍

Now we want to hear from YOU! 👇🏾

🌿 What do you call collard greens in your culture, and how do you traditionally prepare or preserve them on a budget?

Let’s share our food traditions, celebrate our roots, and keep our culinary heritage alive—one affordable, flavorful leaf at a time. 🌿✨

Today’s dish is proof that simple ingredients can still make a beautiful, satisfying meal. 🌱🍝

I made a simple onion pasta using ingredients that are readily available in your pantry or garden, as usual.

The pasta is tossed with onions and topped with a crunchy mix of sunflower seeds, sesame seeds and roasted nuts. I roasted the seeds with garlic, ginger and seasoning to bring out all that flavour and texture.

Simple. Affordable. Accessible. Delicious.

Golden, creamy, crunchy. 🍲✨

A simple bowl of comfort made a little more special with toasted sesame, black sesame, roasted peanuts and fresh spring onion.

I love taking simple, affordable ingredients and turning them into something that feels nourishing, beautiful and full of flavour. 🌱

Easy, simple, and made on a budget 🌱

Today’s bowl: couscous mixed with chopped carrots, greens, red onion, garlic, pepper, a dash of lemon juice, soy sauce, seasoning, and salt — topped with refried beans.

Nothing complicated. Just everyday ingredients that are readily available, put together to make a filling, flavourful plant-based meal. 🌱

Vegan food doesn’t have to be expensive or complicated. Sometimes, you just have to work with what you have. 💚

It was an honour to take part in the Shoko Festival Green Cities Edition — cooking, showcasing and sharing delicious vegan food as part of a festival centred around climate, environmentalism and sustainability. 🌱 Shoko Festival - FOODXART

A huge thank you to everyone who helped make the kitchen come together. From prep to cooking, serving and everything in between, this wouldn’t have been possible without the incredible team behind the scenes.

Thank you for showing up, putting in the work and helping us bring plant-based food, culture and creativity to Shoko. ❤️🌍
