This is a very refreshing vegetarian meal that my family and I have variations of at least once a week. Try this tomato sauce on spaghetti and steamed veggies of your choice
Tomato Pasta Sauce
Ingredients
• ¼ cup olive oil
• Medium to large onion chopped in the food processor or blender
• 4-6 cloves garlic crushed
• ¼ tsp crushed red pepper flakes
• 1 tbsp Italian seasoning
• 2 tbsp tomato paste
• 3 large red tomatoes chopped in the blender
• 1 tsp salt
• ½ tsp freshly ground black pepper
Instructions
1. Heat olive oil in a large pot over medium heat and add the onions and cook until soft, 3-4 min
2. Stir in the garlic, pepper flakes, Italian spice and tomato paste. Cook a minute more for the development of the flavours
3. Add the tomatoes and lower the heat so the sauce gently simmers. Stir in the salt and pepper and let simmer for 20 to 30 min or until it reduces by about a third
4. Turn off the heat and stir in fresh basil and enjoy with your pasta
