Když se v Polsku před více než deseti lety začalo mluvit o „pivní revoluci“, jedním z jejích nejvýraznějších jmen byl AleBrowar. Značka vyrostla z domácího vaření 🫕 a obdivu k americkému craftu. Pomohla změnit představu o tom, jak může polské pivo chutnat a především ukázala, že i v zemi s hlubokou tradicí průmyslového ležáku je prostor pro výrazně chmelená, experimentální a stylově odvážná piva.

Za vznikem AleBrowar v roce 2️⃣0️⃣1️⃣2️⃣ stáli Arkadiusz Wenta, Michał Saks a Bartek Napieraj. Ještě předtím spolu experimentovali v domácím pivovaru AleLaboratorium a podobně jako řada tehdejších evropských craftových sládků hledali inspiraci především za Atlantikem. Americká pivní scéna tehdy nabízela přesně to, co domácí vaření umožňovalo, tedy výrazné chmelení, nové pivní styly a především ochotu zkoušet věci, které se v tradičním pivovarnictví příliš nenosily. Možná se trochu zapomnělo na to, že tradiční pivovarnictví dalo základ tomu, co začalo v nové éře vznikat.

První piva AleBrowaru se vařila ještě v režimu létajícího pivovaru 🧳, tedy bez vlastního výrobního zázemí. Pivovar spolupracoval s Browar Gościszewo, což je ostatně model, který byl v začátcích polské craftové scény poměrně běžný. Vlastní pivovar uvedli do provozu až v roce 2017, kdy AleBrowar otevřel výrobu v Lęborku, odkud pochází Arkadiusz Wenta.

Pivovar jsem si při cestě mezi Gdyní a Łebou samozřejmě nemohl nechat ujít. Prodejna však byla v době mé návštěvy zavřená, takže místo důkladné nákupní inspekce došlo alespoň na obhlídku areálu 🧐 Pokud se v této části Polska budete pohybovat, tak doporučuji udělat si zajížďku také do Łeby. Místní písečné duny 🏜 a procházka kolem moře rozhodně stojí za to, člověk si tam může alespoň trochu vyvětrat hlavu po všech těch degustacích.

Neméně důležitou součástí historie AleBrowaru se staly vlastní bary. V roce 2016 otevřel první taproomy v Gdyni a Wrocławi. Volba těchto měst nebyla náhodná. Gdyně byla spojena s Michałem Saksem, Wrocław zase s Bartkem Napierajem. Taproomy zároveň nabídly značce přímý kontakt s pivní komunitou a lidé tu mohli ochutnávat piva, sledovat premiéry novinek, potkávat se a diskutovat 💬 o tom, jestli je v pivu dostatek chmele. Což je disciplína, ve které se část craftové komunity dokáže zabavit překvapivě dlouho.

Oba podniky jsem během své návštěvy Polska navštívil🚶‍♂️Ve Wrocławi už jsem měl za sebou poměrně náročný pivní den, takže volba degustačního prkénka byla spíše otázkou pudu sebezáchovy než touhy po dalším objemu. Ochutnávka nicméně proběhla hladce a menší porce několika piv byly v danou chvíli ideálním řešením.

V Gdyni jsem měl naopak více času 🕓 i prostoru pro širší ochutnávku. Zážitek z taproomu však poněkud poznamenala obsluha, jejíž pracovní tempo připomínalo spíše úsporný režim než gastronomický sprint. Přijít, odejít, příliš se nenadřít. Všechno je zkrátka hlavně o lidech.
Senzorickému hodnocení navíc příliš nepomáhalo prostředí. V taproomu byl cítit marihuanový kouř 🚬, takže posuzovat jemnější aromatické charakteristiky jednotlivých piv bylo místy poněkud obtížné. Možná šlo o nový koncept multisenzorické degustace, možná jen o smůlu. Každopádně chmel měl tentokrát konkurenci.

Z poměrně široké nabídky obou taproomů bych doporučil především polský India Pale Ale Hop Sasa nebo sour Mango Man 🥭 Ostatní piva ve mně však nevyvolaly pověstné „wow“. Technologicky i stylově byla piva v pořádku, bez výrazných pivních vad a odpovídala deklarovaným stylům. Chyběla mi ale větší osobitost nebo výraznější chuťový podpis, který by si člověk zapamatoval i po několika dalších pivech.

A právě tady se ukázal zajímavý rozdíl mezi historickým významem značky a současným degustačním dojmem. AleBrowar bezpochyby patří mezi pivovary, které pomáhaly formovat moderní polskou pivní scénu. Jenže pivní revoluce má jednu nepříjemnou vlastnost. Jakmile se jednou podaří něco revolučního, velmi rychle se z toho stane standard. To, co bylo před deseti lety odvážné a neobvyklé, dnes může působit jako dobře zvládnutá klasika.
Samotná pivní kultura v taproomech však byla na vysoké úrovni 🔝 Bylo vidět, že AleBrowar si vybudoval nejen značku, ale také komunitu 🫂 a způsob, jakým se svým pivem pracovat přímo mezi zákazníky.

Postupem času se proměnil také samotný tým. V roce 2023 z původní trojice zakladatelů zůstal v AleBrowaru už pouze Arkadiusz Wenta. Taproomy mezitím dál zůstávají důležitou součástí identity značky, byť jejich síť se v průběhu let měnila. Některé historické podniky, například AleBrowar Wajdeloty v Gdaňsku, už dnes nefungují. Pivovar se však nespoléhá pouze na vlastní bary a využívá také tap takeovery a spolupráce s dalšími podniky 🤝

Příkladem je rok 2026, kdy se AleBrowar na několik dní objevil v gdaňské Stacji Food Hall 🎪 Obsadil místní výčepy a představil zde širší průřez své produkce. I tím si značka udržuje kontakt s pivní scénou a ukazuje, že její příběh zdaleka neskončil zavřením některých historických taproomů.

AleBrowar tak pro mě zůstává především důležitou historickou značkou polského craftového pivovarnictví. Současně ale platí, že historický význam pivovaru automaticky neznamená degustační nadšení při každé návštěvě 🙇‍♂️ Piva, která jsem ochutnal, byla řemeslně zvládnutá a stylově čitelná, ale osobně mi v nich chyběl výraznější charakter. AleBrowar už dnes není revolucí a měl by se posunout, aby mohl pivním nadšencům nabídnout širší pohled na to, co bylo alternativou k tomu, co je dnes "moderní".

When the “beer revolution” began to be talked about in Poland more than a decade ago, one of its most prominent names was AleBrowar. The brand grew out of home brewing 🫕 and admiration for American craft. It helped change the idea of ​​what Polish beer could taste like and, above all, showed that even in a country with a deep tradition of industrial lager, there is room for heavily hopped, experimental and stylistically bold beers.

Arkadiusz Wenta, Michał Saks and Bartek Napieraj were behind the creation of AleBrowar in 2️⃣0️⃣1️⃣2️⃣. Before that, they had experimented together in their home brewery AleLaboratorium and, like many European craft brewers of the time, they looked for inspiration mainly across the Atlantic. At the time, the American beer scene offered exactly what home brewing allowed, namely strong hopping, new beer styles and, above all, a willingness to try things that were not very common in traditional brewing. It may have been forgotten that traditional brewing laid the foundation for what began to emerge in the new era.

AleBrowar's first beers were brewed in a flying brewery mode 🧳, i.e. without its own production facilities. The brewery collaborated with Browar Gościszewo, which is a model that was quite common in the early days of the Polish craft scene. They only put their own brewery into operation in 2017, when AleBrowar opened production in Lębork, where Arkadiusz Wenta comes from.

Of course, I couldn't miss the brewery on my way between Gdynia and Łeba. However, the store was closed at the time of my visit, so instead of a thorough shopping inspection, I at least took a tour of the premises 🧐 If you're going to be in this part of Poland, I recommend making a detour to Łeba as well. The local sand dunes 🏜 and a walk around the sea are definitely worth it, you can at least clear your head a little there after all those tastings.

No less important part of AleBrowar's history were its own bars. In 2016, it opened its first taprooms in Gdynia and Wrocław. The choice of these cities was not accidental. Gdynia was associated with Michał Saks, Wrocław with Bartek Napieraj. At the same time, the taprooms offered the brand direct contact with the beer community, and people could taste beers, watch the premieres of new products, meet and discuss 💬 whether there was enough hops in the beer. Which is a discipline in which a part of the craft community can have fun for a surprisingly long time.

I visited both establishments during my visit to Poland🚶‍♂️I had already had a fairly demanding beer day in Wrocław, so choosing a tasting board was more a matter of self-preservation than a desire for more volume. However, the tasting went smoothly and smaller portions of several beers were the ideal solution at the time.

In Gdynia, on the other hand, I had more time 🕓 and space for a wider tasting. The taproom experience was somewhat marred by the waitstaff, whose work pace was more like austerity than a gastronomic sprint. Come, go, don't push yourself too hard.

From the relatively wide range of both taprooms, I would especially recommend the Polish India Pale Ale Hop Sasa or the sour Mango Man 🥭 However, the other beers did not evoke the proverbial "wow" in me. Technologically and stylistically, the beers were okay, without any significant beer flaws and corresponded to the declared styles. However, I missed greater individuality or a more pronounced taste signature that one would remember even after several more beers.

And it was here that an interesting difference between the historical significance of the brand and the current tasting impression became apparent. AleBrowar is undoubtedly one of the breweries that helped shape the modern Polish beer scene. But the beer revolution has one unpleasant feature. Once something revolutionary is achieved, it very quickly becomes the standard. What was bold and unusual ten years ago can today seem like a well-mastered classic.
However, the beer culture in the taprooms itself was at a high level 🔝 It was clear that AleBrowar had built not only a brand, but also a community 🫂 and a way of working with its beer directly among customers.

Over time, the team itself also changed. In 2023, only Arkadiusz Wenta remained in AleBrowar from the original three founders. Taprooms, meanwhile, remain an important part of the brand's identity, although their network has changed over the years. Some historical establishments, such as AleBrowar Wajdeloty in Gdańsk, are no longer operating today. However, the brewery does not rely only on its own bars and also uses tap takeovers and cooperation with other establishments 🤝

An example is the year 2026, when AleBrowar appeared in Gdańsk's Stacja Food Hall for several days 🎪 It occupied local taps and presented a wider cross-section of its production there. Even in this way, the brand maintains contact with the beer scene and shows that its story is far from over with the closure of some historical taprooms.

For me, AleBrowar remains primarily an important historical brand of Polish craft brewing. At the same time, however, the historical significance of a brewery does not automatically mean tasting enthusiasm on every visit 🙇‍♂️ The beers I tasted were masterfully crafted and stylistically legible, but personally I lacked a more distinctive character. AleBrowar is no longer a revolution today and should move forward to offer beer enthusiasts a broader view of what was an alternative to what is "modern" today.

Pivovar Elektrárna v roce 2️⃣0️⃣2️⃣4️⃣ volně navázal na činnost pivovaru Proud, jehož název následně využil Plzeňský Prazdroj a.s. jako novou značku pro svůj „ležák mladé generace“. Proudu se již dříve přezdívalo „pivo z elektrárny“⚡️, takže nové pojmenování se přímo nabízelo.

Pivovar sídlí v areálu Plzeňského Prazdroje v bývalé elektrocentrále 🏭 na soutoku řek Mže a Radbuzy. V hlavním prostoru budovy se nachází pětinádobová varna o objemu 30 hektolitrů, přičemž celkový roční výstav se pohybuje kolem 10 000 hektolitrů. Do budoucna by zde mohl vzniknout také sál s kapacitou až 600 osob. V plánu je rovněž přímé propojení s centrem města prostřednictvím lávky přes řeku.

Ředitelem minipivovaru je Michal Škoda a pozici sládkové zastává Lenka Straková, která má zkušenosti mimo jiné s vývojem receptur pro projekt Volba sládků. Elektrárna se zaměřuje na široké spektrum pivních stylů. Vedle nealkoholických piv a různých pivních speciálů se zde vyrábějí také piva stařená v dřevěných sudech 🪵Zajímavostí je využití sudů po japonské whisky Nikka 🥃 Tato palírna své sudy pro staření piva běžně neposkytuje, ale díky společnému vlastníkovi, japonské společnosti Asahi Breweries, se je podařilo pro Elektrárnu získat. Vedle sudových piv se produkce plní především do plechovek, zatímco u limitovaných speciálů se objevují také skleněné lahve.

Do pivovaru je možné nahlédnout 🧐 během pravidelných prohlídek, z nichž řadu provází přímo sládková Lenka Straková 👩‍🦱 Po pivovaru Proud jsme si všechno zopakovali s kamarádem o pár let později a kromě samotného provozu Elektrárny jsme dostali možnost ochutnat několik piv přímo z ležáckých tanků i dřevěných sudů. Všechna byla ve výborné kondici 🔝, což ostatně není překvapivé, ochutnávka piva přímo u zdroje má z hlediska čerstvosti a správného zacházení nepochybné výhody. Součástí předem dohodnuté návštěvy byla také prohlídka historických sklepů Plzeňského Prazdroje, kde jsme ochutnali nefiltrovaný a nepasterizovaný Pilsner Urquell 🍺 přímo z dřevěného sudu, kde chutná nejlépe.

Piva z Elektrárny lze poměrně často najít v podnicích, kde se Pilsner Urquell čepuje v rámci projektu Speciály z Prazdroje. Stabilní zastoupení má pivovar také v restauraci 🍽 Na Spilce přímo v areálu Plzeňského Prazdroje, kde se natrvalo usadila jejich světlá desítka Štamgast. Pro mě osobně je Elektrárna nejlépe dostupná v ostravském kontejnerovém sezónním baru ☀️ Pavilon v areálu výstaviště Černá Louka. Právě zde bývají piva Elektrárny zastoupena na výčepech a nechybějí ani plechovky v lednici 🧊 Z vlastní zkušenosti mohu potvrdit, že zdejší pivo bývá velmi dobře ošetřené a ve výborné kondici. Z pohledu pivní kultury mám pouze jednu výhradu. Ležákové sklenice zde bývají používány pro všechny pivní styly, včetně svrchně kvašených piv, což samozřejmě není ideální. V pivovaru o tom ví, nicméně takhle si to nastavil provozovatel baru 🤷‍♂️ Natrvalo se zde nicméně usadil bezlepkový světlý ležák Ventill, uvařený z českých sladů 🌾 a chmelů. Charakterizuje jej především výborná pitelnost a čistý chuťový profil.

Jednou ze zajímavostí Elektrárny jsou také kooperační várky vznikající ve spolupráci s různými subjekty. Mezi nejviditelnější bezpochyby patří piva uvařená pro hudební skupiny Tři sestry a Iron Maiden 🎸 Vlastní světlý ležák mají Tři Sestry již od roku 2011, kdy se jejich pivo vařilo v Pivovar Hubertus Kácov. Nyní však, zdá se, kapela v Elektrárně zakotvila natrvalo.

Na pivu pro Iron Maiden má výrazný podíl zpěvák 🎤 kapely a zkušený pivovarník Bruce Dickinson. Pro Iron Maiden se různé pivní styly vaří již od roku 2013 v pivovarech po celém světě. Nejznámějším z nich je bezpochyby bitter Trooper z anglického Robinsons Brewery, který jsem osobně před časem navštívil. Na trhu se však objevily také IPL Hellcat z BrewDog USA, nealkoholické Running Free od švédského pivovaru Nils Oscar, ležák Aces High od brazilského Bodebrown nebo Trooper XPL z australského pivovaru Nomad. Elektrárna tuto výzvu pojala po svém a uvařila světlý ležák s novým aromatickým chmelem Saturn, který pochází z programu Odolchmel. Grafiku vytvořil výtvarník kapely tak, aby odpovídala charakteristickému vizuálnímu stylu Iron Maiden včetně maskota Eddieho 💀 Trooper Saturn se čepoval v květnu 2025 na koncertu Iron Maiden v pražských Letňanech, který byl uspořádán k 50. výročí vzniku kapely. Tento ležák odpovídá také mým představám o kvalitním pivu a lednici jsem jím doplňoval pokaždé, když jsem na něj narazil.

Velmi zajímavým projektem je rovněž spolupráce Elektrárny s olomouckým irským pubem ☘️ The BLACK STUFF Irish Pub & Whisky Bar, který považuji za jeden z nejlepších podniků tohoto typu nejen u nás, ale i v evropském měřítku. Pro tento bar s mnoha výčepy vznikl například Imperial Stout stařený v sudu po bourbonu Elijah Craig nebo Irish Red Lager, který zrál 11 měsíců ve francouzském sudu po víně 🍷 a whiskey.

Za pozornost stojí také lahve o objemu 0,75 litru s korkovým uzávěrem 🍾, které vznikly ve spolupráci s moravským vinařstvím Proqin. Jedná se o piva dokvašovaná v lahvi, konkrétně višňový kyseláč 🍒 a session IPA. Právě spojení pivovarských a vinařských postupů je u těchto piv zajímavým zpestřením nabídky Elektrárny.

Je samozřejmě možné, že moje zkušenosti s pivy Elektrárny se budou od zkušeností jiných konzumentů lišit. Při hodnocení piva totiž rád vyhledávám místa, kde je možné ochutnat jej v co nejlepší kondici. Nespoléhám se na brigádníka plnicího plechovky nebo dodávky z "rohlíku" 🚚, kde při špatném skladování může utrpět nepasterizované pivo nejvíce.

Ať už tedy k Elektrárně přistoupíme z pohledu pivních stylů, práce se sudy, kooperačních várek 🤝 nebo samotné kvality čepovaného piva, je zřejmé, že zdejší tým má ambici posouvat nabídku Plzeňského Prazdroje mimo tradiční rámec ležáků. Elektrárna dokáže nabídnout jak dobře pitelné pivo pro běžného konzumenta, tak experimentálnější speciály určené pro pivní nadšence. Právě kombinace technologického zázemí velkého pivovaru, zkušeného týmu a prostoru pro kreativitu podle mě představuje její největší přednost.

In 2️⃣0️⃣2️⃣4️⃣, the Elektrárna brewery loosely followed the activities of the Proud brewery, whose name was subsequently used by Plzeňský Prazdroj a.s. as a new brand for its “young generation lager”. Proud was previously nicknamed “beer from the power plant”⚡️, so the new name was a natural fit.

The brewery is located on the Plzeňský Prazdroj premises in the former power plant 🏭 at the confluence of the Mže and Radbuza rivers. The main area of ​​the building houses a five-vessel brewhouse with a capacity of 30 hectoliters, with a total annual production of around 10,000 hectoliters. In the future, a hall with a capacity of up to 600 people could also be built here. A direct connection to the city center via a footbridge over the river is also planned.

The director of the microbrewery is Michal Škoda, and the position of brewer is held by Lenka Straková, who has experience, among other things, in developing recipes for the Brewers’ Choice project. Elektrárna focuses on a wide range of beer styles. In addition to non-alcoholic beers and various beer specials, they also produce beers aged in wooden barrels 🪵An interesting feature is the use of Japanese Nikka whiskey barrels 🥃 This distillery does not normally provide its own barrels for aging beer, but thanks to the joint owner, the Japanese company Asahi Breweries, they managed to obtain them for Elektrárna In addition to cask beers, production is mainly filled into cans, while limited specials also appear in glass bottles.

You can take a look at the brewery 🧐 during regular tours, many of which are led directly by brewer Lenka Straková 👩‍🦱 After the Proud brewery, a friend and I repeated everything a few years later and, in addition to the actual operation of Elektrárna, we had the opportunity to taste several beers directly from lager tanks and wooden barrels. All were in excellent condition 🔝, which is not surprising, tasting beer directly at the source has undoubted advantages in terms of freshness and proper handling. Part of the pre-arranged visit was also a tour of the historical cellars of Plzeňský Prazdroj, where we tasted unfiltered and unpasteurized Pilsner Urquell 🍺 directly from a wooden barrel, where it tastes best.

Beers from Elektrárna can be found quite often in companies where Pilsner Urquell is tapped as part of the Specials from Prazdroj project. The brewery also has a stable presence in the restaurant 🍽 Na Spilce right on the Plzeňský Prazdroj premises, where their bright dozen Štamgast have permanently settled. For me personally, Elektrárna is best available in the Ostrava container seasonal bar ☀️ Pavilon in the Černá Louka exhibition grounds. This is where Elektrárna beers are usually represented on taps and there are also cans in the fridge 🧊 From my own experience, I can confirm that the local beer is usually very well treated and in excellent condition. From the point of view of beer culture, I have only one reservation. Lager glasses are used here for all beer styles, including top-fermented beers, which is of course not ideal. The brewery knows about it, but the bar operator has set it up this way 🤷‍♂️ However, the gluten-free light lager Ventill, brewed from Czech malts 🌾 and hops, has permanently settled here. It is characterized primarily by excellent drinkability and a clean taste profile.

One of the attractions of Elektrárna is also the cooperative brews created in cooperation with various entities. The most visible are undoubtedly the beers brewed for the musical groups Three Sisters and Iron Maiden 🎸 Three Sisters have had their own light lager since 2011, when their beer was brewed at the Hubertus Kácov Brewery. Now, however, it seems that the band has permanently settled in Elektrárna.

The band's singer 🎤 and experienced brewer Bruce Dickinson has a significant share in the beer for Iron Maiden. Various beer styles have been brewed for Iron Maiden since 2013 in breweries around the world. The most famous of them is undoubtedly the bitter Trooper from the English Robinsons Brewery, which I personally visited some time ago. However, IPL Hellcat from BrewDog USA, non-alcoholic Running Free from the Swedish brewery Nils Oscar Bryggeri, Aces High lager from the Brazilian Bodebrown or Trooper XPL from the Australian brewery Nomad have also appeared on the market. Elektrárna took on this challenge in its own way and brewed a pale lager with the new aromatic Saturn hops from the Odolchmel program. The graphics were created by the band's artist to match Iron Maiden's characteristic visual style, including the mascot Eddie 💀 Trooper Saturn was tapped in May 2025 at the Iron Maiden concert in Letňany, Prague, which was organized to celebrate the band's 50th anniversary. This lager also meets my expectations of quality beer and I filled the fridge with it every time I came across it.

Another very interesting project is the cooperation of Elektrárna with the Olomouc Irish pub ☘️ The Black Stuff, which I consider one of the best establishments of this type not only in our country, but also in Europe. For this bar with many taps, for example, Imperial Stout aged in an Elijah Craig bourbon barrel or Irish Red Lager, which matured for 11 months in a French wine 🍷 and whiskey barrel, was created.

Also worth noting are the 0.75 liter bottles with a cork closure 🍾, which were created in collaboration with the Moravian winery Proqin. These are beers fermented in the bottle, specifically sour cherry 🍒 and session IPA. It is the combination of brewing and winemaking processes that makes these beers an interesting addition to Elektrárna's offer.

Of course, it is possible that my experiences with Elektrárna's beers will differ from the experiences of other consumers. When evaluating beer, I like to look for places where it is possible to taste it in the best possible condition. I don't rely on a part-time worker filling cans or deliveries from the "roller" 🚚, where unpasteurized beer can suffer the most if stored poorly.

Whether we approach Elektrárna from the perspective of beer styles, working with barrels, cooperative brews 🤝 or the quality of the draft beer itself, it is clear that the team here has the ambition to push the Pilsner Prazdroj offer beyond the traditional framework of lagers. Elektrárna can offer both drinkable beer for the average consumer and more experimental specials designed for beer enthusiasts. In my opinion, the combination of the technological background of a large brewery, an experienced team and space for creativity is its greatest advantage.

Lázeňské město ⛲️ Sopoty jsem spojil s výletem během pobytu v nedaleké Gdyni. Do města mě původně lákalo především dlouhé dřevěné molo, baltské moře 🌊 a procházka po rušné ulici Bohaterów Monte Cassino. Lhal bych ale, kdybych tvrdil, že jsem o Sopotech nevěděl ještě o jedné věci. O místním pivovaru Browar Miejski Sopot, který se snaží spojovat gastronomii 🍽 s polskou pivovarnickou tradicí. A právě pivovar se nakonec stal jednou z mých hlavních zastávek.

Browar Miejski Sopot ovšem není začátkem pivovarnictví ve městě. Naopak se snaží navázat na mnohem starší tradici. Oficiální historie pivovaru odkazuje na někdejší sopotský pivovar Górski Zameczek 🏰, známý také pod německým názvem Bergschlösschen. Historie tohoto podniku sahá hluboko do 19. století. Na začátku 20. století byl pivovar spojen s Michałem Wanningerem a jeho syny. Rodina Wanningerových pivovar provozovala až do roku 1918, kdy přešel pod vlastnictví gdaňského pivovaru Danziger Aktien-Bierbrauerei. Ten následně rozhodl o jeho likvidaci a tím se jedna kapitola 📜 sopotského pivovarnictví uzavřela ❌️

Na novou tradici si Sopot musel počkat téměř celé století. Browar Miejski Sopot vznikl v roce 2️⃣0️⃣1️⃣4️⃣, tedy v době, kdy Polskem naplno procházela pivní revoluce a rostl zájem o řemeslné pivo i menší lokální pivovary. Současně s pivovarem vznikla také restaurace, samotné vaření piva však začalo až na začátku následujícího roku. Současný pivovar navíc nevznikl takříkajíc na zelené louce. Usídlil se v prostorách bývalého legendárního sopotského podniku Złoty Ul. Ten měl v minulosti pověst místa, kde se potkávali studenti 👨‍🎓, umělci 💃, podnikatelé 🧑‍💼 i známé osobnosti Trojměstí (Gdyně - Sopoty - Gdaňsk). Noví majitelé se rozhodli na tuto atmosféru navázat, přestože podnik dostal nové jméno a prošel výraznou proměnou.

Samotná budova nabízí více než 500 metrů čtverečních prostoru, přičemž přibližně 150 metrů čtverečních připadá na pivovarskou technologii. Ta je navíc přímo součástí interiéru restaurace, takže nemusíte zůstat pouze u představy, že se jeho pivo někde „vzadu“ vaří. Výrazným prvkem interiéru jsou cihlové stěny 🧱 a nechybí třeba bílý klavír 🎹 Celé prostředí tak působí spíš jako stylová městská restaurace s vlastním pivovarem než jako klasická pivovarská hospoda.

Na přípravě prvních receptur 📝 se podílel český sládek, který tady na varně z Pacovských strojíren zaučoval místního sládka Adama Żemetra. V červnu 2015 byla výrobní část rozšířena o další tanky určené ke zrání piva. O rok později přibyly další výrobní kapacity a zásobník teplé procesní vody 💦 V roce 2018 byla dokončena další část technologie, která umožnila mimo jiné práci s pivy zrajícími v dubových sudech. Pivovar se postupně neomezil pouze na klasické spodně kvašené ležáky a začal vařit širší portfolio pivních stylů, včetně svrchně kvašených piv a limitovaných edic.

Při mé návštěvě byly na výčepu čtyři druhy. Tři z nich tvoří stálou nabídku – Czech Gold Pils, German Blond Weizen a American Red IPA. Jako sezónní speciál byl k dispozici English IPA, takže jsem měl před sebou poměrně povedené mezinárodní zastoupení pivních stylů 🗺 Nejlepší způsob, jak nabídku poznat, pro mě samozřejmě představovala degustace. Objednal jsem si proto pivní degustační prkénko se vzorky o objemu 0,25 litru a postupně ochutnal všechna čtyři piva. Z hlediska stylového zařazení byla zvládnutá čistě a bez výraznějších vad. Přesto mi u většiny z nich chyběla především větší plnost a celková hloubka chuti. Nejvíce jsem to vnímal u pšeničného piva 🌾 a American Red IPA. U IPA s obsahem alkoholu přesahujícím 7 % bych očekával výraznější tělo a komplexnější chuťový profil, který by vyšší alkohol dokázal lépe podepřít. Při návštěvě mě zaujaly také klasické pivní sklenice s logem pivovaru. Trochu mě naopak překvapilo, že na stole chyběly pivní podtácky. U podniku, který staví část své identity právě na vlastním pivu, bych je považoval za poměrně samozřejmý detail 🤔

Později jsem v lednici 🧊 objevil lahvová piva, která nebyla běžně součástí nabídky na výčepu. Přirozeně jsem je chtěl ochutnat také. Tady mě ale čekalo trochu překvapení. Pivovar totiž u lahví uplatňuje poměrně netradiční přístup, se kterým se setkávám v pivovarech velmi zřídka - reálně u dvou z tisíce. Jejich konzumace přímo v restauraci není možná 🤷‍♂️ Pokud je tedy chcete ochutnat, musíte si je odnést s sebou.

Pivovarský zážitek ale samozřejmě nestojí jen na pivu. Součástí podniku je také restaurace, která nabízí tradiční polskou kuchyni 👨‍🍳 i mezinárodní jídla s německými vlivy. Já jsem neodolal pirohům 🥟, zatímco pro větší jedlíky jsou v nabídce například burgery 🍔 nebo vepřová pečeně s knedlíky. Na jídlo jsem sice čekal déle 🕦, než by bylo podle mého názoru nutné, nakonec jsem ale rozhodně neodcházel hladový.

Sopoty tak pro mě nebyl jen krátkou zastávkou u Baltského moře 🏖 a místního mola. Browar Miejski Sopot ukazuje, že i město s bohatou historií může na své pivovarnické dědictví navázat moderním způsobem. Pivovar se nesnaží být muzeem minulosti, ale spíš současným městským podnikem, který historický odkaz využívá jako součást své identity.

I combined the spa town ⛲️ of Sopot with a trip during my stay in nearby Gdynia. I was initially attracted to the city mainly by the long wooden pier, the Baltic Sea 🌊 and a walk along the busy Bohaterów Monte Cassino street. But I would be lying if I said that I didn't know one more thing about Sopot. About the local brewery Browar Miejski Sopot, which tries to combine gastronomy 🍽 with the Polish brewing tradition. And it was the brewery that ended up becoming one of my main stops.

However, Browar Miejski Sopot is not the beginning of brewing in the city. On the contrary, it tries to continue a much older tradition. The official history of the brewery refers to the former Sopot brewery Górski Zameczek 🏰, also known by the German name Bergschlösschen. The history of this enterprise goes back deep into the 19th century. At the beginning of the 20th century, the brewery was associated with Michał Wanninger and his sons. The Wanninger family operated the brewery until 1918, when it passed into the ownership of the Danziger Aktien-Bierbrauerei brewery in Gdańsk. The latter subsequently decided to liquidate it, thus closing one chapter 📜 of Sopot brewing ❌️

Sopot had to wait almost a century for a new tradition. Browar Miejski Sopot was founded in 2️⃣0️⃣1️⃣4️⃣, at a time when Poland was in the midst of a beer revolution and interest in craft beer and smaller local breweries was growing. A restaurant was also founded at the same time as the brewery, but brewing itself only began at the beginning of the following year. Moreover, the current brewery was not created from scratch, so to speak. It was located in the premises of the former legendary Sopot company Złoty Ul. In the past, it had a reputation as a place where students 👨‍🎓, artists 💃, entrepreneurs 🧑‍💼 and famous personalities of the Tricity (Gdynia - Sopot - Gdańsk) met. The new owners decided to continue this atmosphere, even though the business got a new name and underwent a significant transformation.

The building itself offers more than 500 square meters of space, with approximately 150 square meters of brewery technology. This is also directly part of the restaurant's interior, so you don't have to just imagine that its beer is brewed somewhere "in the back". A distinctive element of the interior is the brick walls 🧱 and there is a white piano 🎹 The whole environment feels more like a stylish city restaurant with its own brewery than a classic brewery pub.

A Czech brewer participated in the preparation of the first recipes 📝, who trained local brewer Adam Żemet here at the Pacovské strojíry brewery. In June 2015, the production section was expanded to include additional tanks designed for beer maturation. A year later, additional production capacities and a hot process water tank were added 💦 In 2018, another part of the technology was completed, which allowed, among other things, work with beers aged in oak barrels. The brewery gradually did not limit itself to classic bottom-fermented lagers and began to brew a wider portfolio of beer styles, including top-fermented beers and limited editions.

When I visited, there were four types on tap. Three of them form a permanent offer - Czech Gold Pils, German Blond Weizen and American Red IPA. English IPA was available as a seasonal special, so I had a fairly good international representation of beer styles in front of me 🗺 The best way to get to know the offer was, of course, a tasting. So I ordered a beer tasting board with 0.25 liter samples and gradually tasted all four beers. In terms of style classification, it was managed cleanly and without any significant flaws. However, most of them lacked greater fullness and overall depth of flavor. I noticed this the most with the wheat beer 🌾 and the American Red IPA. I would expect a more pronounced body and a more complex flavor profile for an IPA with an alcohol content exceeding 7%, which would better support the higher alcohol content. During my visit, I was also impressed by the classic beer glasses with the brewery logo. On the other hand, I was a little surprised that there were no beer coasters on the table. For a company that builds part of its identity on its own beer, I would consider them a fairly obvious detail 🤔

Later, I discovered bottled beers in the fridge 🧊 that were not normally part of the taproom's menu. Naturally, I wanted to try them too. But here I was in for a bit of a surprise. The brewery takes a rather unconventional approach to bottles, which I rarely encounter in breweries - realistically, two out of a thousand. Consuming them directly in the restaurant is not possible 🤷‍♂️ So if you want to try them, you have to take them with you.

But the brewery experience is of course not just about beer. The establishment also includes a restaurant that offers traditional Polish cuisine 👨‍🍳 as well as international dishes with German influences. I couldn't resist the pierogi 🥟, while for bigger eaters, the menu includes burgers 🍔 or roast pork with dumplings. Although I waited longer for my food 🕦 than I thought was necessary, I definitely didn't leave hungry.

Sopot was not just a short stop at the Baltic Sea 🏖 and the local pier for me. Browar Miejski Sopot shows that even a city with a rich history can build on its brewing heritage in a modern way. The brewery does not try to be a museum of the past, but rather a contemporary urban enterprise that uses historical heritage as part of its identity.
