La Chaîne des Rôtisseurs Canberra La Chaîne des Rôtisseurs brings professional and non-professional members together to celebrate their passion for fine cuisine and beverage.

We are a food & wine club I would like to take this opportunity to warmly welcome you to La Chaine des Rôtisseurs, Canberra Bailliage. We are affiliated with The International Chaîne des Rôtisseurs, a society dedicated to preserving the traditions of fine dining, traditions that go back in French history to the 13th century. The Chaîne des Rôtisseurs, an international gastronomic society, founded

in Paris in 1950, traces its origins back to 1248. At that time, the French King Louis IX (later canonized as Saint Louis) wishing to thank the trades which had contributed to the construction of Sainte Chapelle, ordered the establishment of several professional guilds, one of which was the "Oyeurs" or goose roasters. The vocation of this guild was to improve the technical knowledge of its members: apprentices, tradesmen and masters. Over the decades its activities and privileges were expanded. For more than four centuries the ‘Confrérie des Rôtisseur' cultivated and developed the culinary arts, meeting all the requirements of professionalism and quality demanded by the "Royal Table", until 1793 when the guild system was dissolved during the French Revolution. The Rôtisseurs were completely forgotten until 1950, when Dr. Auguste Bécart, the well-known journalists Jean Valby and Curnonsky (elected "Prince of the Gastronomes"), and chefs Louis Giraudon and Marcel Dorin revived the association and founded the "Confrérie de la Chaîne des Rôtisseurs". In Australia we have local ‘chapters’ or Bailliages in Victoria, South Australia, Western Australia, New South Wales and Queensland. In Queensland we have Bailliages on the Darling Downs, Gold Coast, Brisbane, Sunshine Coast and Cairns. One of the most distinctive feature of La Chaine de Rôtisseurs is that its membership is open to both professional and non-professional members. La Chaine Membership comes with range of benefits including fine dining events in the best local restaurants and hotels with menus created exclusively for our members, internationally recognised memberships; this means you are most welcome to attend a La Chaine function anywhere in the world, and plenty more.

What an unforgettable and world-class evening!

Twenty-four Canberra members and guests gathered at Beltana Farm, Pialligo, for a truly world-class truffle dining experience this week.

Our evening began with a fascinating talk by one of the owners, Alice O’Mara, who gave us an insight into the philosophy behind their 800-tree truffière and the farm that supplies so much of the restaurant’s produce. One of their highly trained truffle dogs, Kenzie, also made a guest appearance.

Then came the highlight — an exceptional five-course farm-to-table menu, showcasing freshly harvested truffles and superb local produce, accompanied by beautifully curated regional wines.

From the setting and hospitality to the food, wine and wonderful company, every element combined to make this a truly unforgettable truffle experience.

Our sincere thanks to everyone at Beltana Farm for delivering an event of such outstanding quality. And thanks also to Châine Bailli Délégué, Norm Harrison and his wife Serena, Bailli of South Australia, who travelled from Adelaide for the function.

Christmas cheer and Chaîne camaraderie filled the air at Canberra Region’s July function on Saturday night. Chaîne members, Daniel and Katrina Hiltbrunner, hosted a Christmas in July dinner at their restaurant, Mélange, in the picturesque Blue Mountains village of Bilpin.
Twenty members and guests travelled from Canberra, Batemans Bay, Sydney and Bathurst for the event.
Katrina and Daniel presented a fantastic Christmas menu featuring local ingredients and paired with amazing wines from around the world.
From the mulled wine and canapés on arrival to the table decorations and the Christmas tree, they went the extra mile to make it a memorable night.

Canberra Region’s June function was an exceptional dinner at Les Bistronomes French restaurant where local member, Maître Rotisseur, Clement Chauvin, prepared a curated menu of proposed new winter dishes and some classics. The menu speaks for itself. Many thanks to sommelier and restaurant manager Talia Cullis and her team for the excellent wine matching and table service.
