This is what honey looked like before anyone thought to filter it. 🍯

No extraction. No processing. No contact with equipment. Just raw comb, straight from the hive - built directly into the cassette by our bees, wax cells still sealed, exactly as the bees left them, untouched by human hand.

A few things worth knowing about it:

🐝 It's the oldest way humans have ever eaten honey
🐝 No two cassettes taste the same — the flavour shifts with whatever the trees were flowering that season
🐝 The wax is entirely edible — it softens naturally as you chew
🐝 Harvested right here in Western Australia, in one of the only Varroa-free beekeeping regions left in Australia

How to serve it: straight onto a cheese board with aged cheddar, manchego or fresh ricotta, sourdough, and sliced pear or fig. Room temperature, never the fridge — cold honey crystallises and loses that soft, cuttable texture.

These two came through the CRC for Honey Bee Products’ 2022 sensory research as the densest, most structured honeys in the entire tasting — the kind that hold their own the way a full-bodied red does at the end of a wine flight. Marri brought leather, lemon myrtle and lavender aromas with pronounced acidity and a medium-to-heavy body. Jarrah went further still: green tea, leather and caramel aromas, dried fig, dark chocolate and lemon citrus on the palate, with high sweetness and high acidity working together for real depth.

High acidity is unusual in honey. It’s the same quality that gives a wine structure and ageing potential — and here, it’s what gives Marri and Jarrah their length and intensity.

Some honeys taste like an orchard. Karri, Yate and Powderbark are the proof.
When the CRC for Honey Bee Products brought in a tasting panel of sommeliers and a coffee Q grader to formally profile Western Australian honeys, these three stood out for their fruit-forward character.
Karri opened with orange blossom and closed on bright citrus acidity.
Yate surprised everyone with banana, oyster shell and herbal notes like tarragon and sage.
Powderbark leaned into dried papaya, fig and caramelised warmth, with sweetness taking the lead.

All three share a medium body — but taste them side by side and you'll find three completely different honeys, each shaped by the tree it came from. It's the same idea behind terroir in wine: change the source, change the flavour.

If you've only ever thought of honey as 'sweet', Yate in particular is worth a try — herbal, savoury and nothing like dessert.

The perfect sweetener for your cuppa!

Honey has a flavour story most of us have never been taught to read.

Late in 2022, three drinks-industry experts — two sommeliers and a coffee Q grader — sat down with 23 jars of Western Australian honey and tasted them the way you'd taste a flight of wine or a lot of specialty coffee. Diluted to moderate the sweetness. Tasted lightest to heaviest. Assessed for aroma, body, sweetness, acidity and flavour, one honey at a time.

The result was Honey Flavour Profiles: South-West of Western Australia, published by the CRC for Honey Bee Products in May 2022 — an early attempt to put shared, sommelier-grade language around WA's native monofloral honeys.

Over the coming posts, we're translating that research into something you can actually use next time you're deciding which jar to reach for. Nine floral sources. Nine very different honeys. All grown from country that produces nothing quite like it anywhere else.
