Two pallets packed and ready for Singapore. One small stowaway caught at the shed door.

We were doing final checks on our latest export order when we noticed an extra item had joined the shipment. One of our younger crew had decided that if the honey was going to Singapore, so was he.

Fragile? Yes. Non-stackable? Absolutely. On the shipping manifest? Not even slightly.

We admire the commitment, but sadly he didn’t pass quality control. Too wriggly, and no barcode.

To our friends in Singapore, thank you for loving Western Australian honey as much as we do. It still gives us a real thrill seeing honey from the South West travel all that way to your table. Please enjoy every jar. The boy stays here.

Disclaimer: no children were harmed in the packing of this order. One was briefly shrink-wrapped for comedic purposes, unwrapped straight after the photo, and paid in honey on toast. He has since asked for a pay rise and a passport.

Where our honey begins.

There’s something special about eating honey straight from the comb.

Our honeycomb is beautiful on a cheeseboard, delicious with fresh bread, yoghurt or fruit, and just as good enjoyed by the spoonful.

The bees have done the hard work. All that’s left to do is enjoy it.

Berries, banana, a spoonful of South West Honey. That's the whole recipe.

The honey does the sweetening, so there's no need for added sugar. It also gives the smoothie a floral, rounded finish you won't get from a sweetener out of a packet.

Six claims, and the reason we can make each one.

Western Australian. Our hives sit in the forests of Western Australia. Not sourced; our hives on these sites.

From our own hives. We're beekeepers before we're a brand. Plenty of honey on shelf is bought by the drum and packed under a label; ours comes out of beehives we own and work ourselves.

Raw and unheated. Heat is what undoes honey. Glucose oxidase, the enzyme the bees add, is heat-sensitive, so we don't heat ours.

Every batch tested. Independently, in a laboratory. The TA number on your jar is the result for that batch, not an average for the range.

Never blended. Colour and flavour shift with what was flowering and what the weather did. We keep harvests separate, so each of our monofloral honeys tastes like themselves.

Family owned and run. Two brothers, their own hives, their own hands on every order.

None of that is unusual among small producers. It's just rarer than the shelf would suggest.

A beehive is a stack of boxes. Where a box sits in that stack decides whether the honey inside it is ours or theirs.

At the bottom is the brood chamber. Eggs, larvae, young bees, and the colony's own stores of honey and pollen. It's the nursery and the pantry, and it belongs to the hive.

Above it sits a queen excluder — a grid with gaps wide enough for a worker bee and too narrow for the queen. She stays below it. Which means everything above it is free of brood.

And above that are the supers. This is where a strong colony puts what it doesn't need. Surplus.

That surplus is the only honey that gets harvested. The boxes below the excluder are left where they are.

It's a simple arrangement, and it's the whole reason a hive can be worked year after year rather than emptied once.
